    Default Free corn!!!

I got a call from a friend who attends the Mormon church in town and he told me to go to the church right away. So after dinner I headed over and there was probably 2 truck loads of corn on the cob dumped into the parking lot. Apparently one of the local farmers had alot leftover so he dumped it at 2 churches in town for anyone to take. I grabbed 4 banana boxes full and then came home. I sent a grocery bag each to 3 of my neighbours who are on disability and don't drive. That took care of 1 box. I gave another box to a friend of mine who is tight for money right now. So I have 2 boxes left. I know 2 more people that might want some so I will try to get hold of them tomorrow morning and then I will process the rest for us for the winter. Depending on how much I have left I might go get some more in the morning. We will see.

It is pretty nice here. So far I have 8 gallon bags full of blanced kernels to go into the freezer and I'm still working at it. I'll let you know the final count later. But it looks like I will have enough corn until next year. YEA!!!

OK so I got a total of 12 - 1 gallon freezer bags full of corn. My hand is really sore from cutting it all of the cob. LOL!!! So that is almost a quarter of the frozen veggies we need for a full year. I have another 2 cups of corn in the fridge, I will use it tomorrow to make corn chowder. I have a full pot of corn on the cob turned on for dinner tonight. I am also just finishing boiling the used cobs. That will be for stock and syrup.

Does anyone know if I have to can the syrup or can it just be kept in the fridge?

I have heard of corn cob jelly. I don't know how to make it though.

Wow, that's awesome! I hope the bank comes by here and dumps some extra money. You could make sweet corn cakes. Yummy!
