Learning to be frugal...
I am just learning to be frugal. I haven't posted a lot, but I have been reading posts. I just have to tell someone, so I figured you all could appriciate this.
I just froze 30 quartbags of corn and 20 green beans! This is the first time I have ever froze veggies. I have had some squash give to us, can I slice it and freeze it too? I just don't want it going bad before we can eat it.
Iam trying to cut back every way I can. these veggies were give to us, so all I had to purchase was the bags. I am learning so much from you all!! Thank You!!

i freeze squash for cassaroles and it works well. just cut up and freeze in bags. but i dont like how squash tastes just served as "squash" alone. we also make zucchini bread etc and freeze. yum!!
yeah, this site is great!! you'll learn so much here!! way to save those veggies!! :-)

Green and yellow squash does not freeze well IMO, but there are other things you can do with it. Last year I made sweet pickles from my yellow squash. I'm sure you can do the same with the green. Follow the canning recipe carefully and it will come out fine.
We eat a lot of summer squash fresh, in stir fry and salads (cut it up just like cucumber) and it can be sliced and used like a cracker for dips and spreads and appetizers. I also recently discovered fritters, which use up more squash than the bread recipes.Use it up, Wear it out,

There's a bunch of recipes on the web. The one I used went like this:
3 c grated squash
1/2 t salt
parsley
1 clove garlic
3/4 c parmesan
1 egg
1 c biscuit mix
milk as needed
I only used the firm parts of the squash, not the seeds. I left the skin on.
I did not have biscuit mix so I just used regular all purpose flour. Mixed everything together, I think I used about 1/8 to 1/4 cup of milk, you only want enough to make a thick batter with it.
Fry in oil or butter on medium heat until golden on one side and slightly puffed, then flip and brown on the 2nd side. It's just like making pancakes.Use it up, Wear it out,

you can use summer or yellow squash in pies. We used to do that and really enjoyed those pies through out the year.
We would boil it and then use it just like solid pack pumpkin (not pumpkin pie mix) in pumpkin pies. Believe it or not, no one ever noticed that our pumpkin pies had summer squash in them.

Great job! That first big push into frugality is kind of exciting, isn't it?!?!
I like to grill squash and zucchini...just brush on a little olive oil and add some salt and pepper when they're done on the grill. SO good!May Goals:

I sliced and froze mine. Worked for me...6 months ago I paid 99 cents a pound for zuchinni and squash...now it $1.99 a pound. Geesh..

I grate and freeze my zucchini in 1 c. amounts to add to baking, soups, stews and chili in the winter months.
