Need some recipes for snacks...
I need some recipes for some snack food....plan on doing a big grocery shopping trip on tuesday as that is my day off this week...I want to make some bars, cookies etc and will freeze some to use at a later date...really would like a congo bar recipe....
Also would like some recipes that involve only veggies....thanks for your help.....

1 can of black beans
1 can of corn
1 can of small diced tomatoes w/chilies
a tbls or two of italian dressing
I've been eating this like candy lately. I eat it with tortilla chips as a snack or just add some protein to it for a meal. (diet and wallet friendly too)

When I still ate tomatoes I really loved making a tomato sandwich with mayonaise. Quick, easy, and somewhat healthy.
You can make chinese picked vegetables. Combine 1 cup of sugar, 1 cup on white vinegar, and 1 cup water. Heat until sugar is melted.
In a clean large jar put in sliced carrots, celery, onions, etc., and pour vinegar mixture over vegetables. Seal and store in refrigerator. In a couple of hours you have pickled vegetables.
Growing up summer meant pickled eggs. They were hardboiled eggs that were peelled and put in a jar with red beet, sugar, and vinegar.
Hummus is good with vegetables. If you have vegetables already prepped you can store them in the fridge and have a quick snack. You can also make a quick wrap if you are really hungry.
Have you tried making gazpacho? Easy to store in fridge and no heating required.
You can also roast or grill a bunch of vegetables and make a chopped salad out of it. The salad could also be put on top of a quick pizza made out of pita bread or english muffin.

Can't claim this recipe as my own, but I've made it a few times and it's delicious.
Granola Bars
1) Preheat oven to 350
2) In a larger bowl, mix the following:
•2 cups oats
•1 cup sunflower seeds
•1 cup dried fruit
•1/2 cup semi-sweet chocolate chips
•2 scoops vanilla flavored whey protein powder
3) In a smaller bowl, mix the following:
•1/2 cup peanut butter
•2 eggs
•1/2 cup honey
4) Mix the contents of the smaller bowl into the larger bowl, adding salt to taste. Let sit for 10 minutes to let the oats absorb the moisture better.
5) Press the mixture into greased 8"x8" baking dish.
6) Bake for 18-20 minutes. Let cool before cutting up into squares or rectangles or whatever other shape strikes your fancy.
