150ºF, but I've never done vegetables, just fruit leather and jerky, so I don't know how long you'll need.

Well, banana chips would probably dry faster than fruit leather since there would be more surface area exposed. Although "fast" is relative when talking about dehydrating - they probably still take at least a day.

I pre heat the oven by turning it on (at 350) and letting it warm up for a *few* minutes. Don't really want it to get hot. Shut the oven off, put the tray of sliced vegs in and leave it over night. Leave the oven light on, it will stay just warm enough to keep drying. I put stuff on a non-stick baking sheet. Check it in the morning. Remove anything that has dried and repeat.

I have a gas over and don't think I can turn it on lower than 170.
I have a "proofer" on my over but don't think that's anything more than the oven light with the convection fan blowing. Don't know if I could use that to dry fruits/vegetables, jerky, etc.
Interesting topic.

I have a dehydrator and set it at 115 for most things (cookies, fruit leathers, fruits and veggies, etc) so I guess if using an oven set about as low as you can. Cookies only take me about 4 hours. Apples take 24+ hours.
