Default How frugal was your dinner tonight?

I was just thinking about the post of budget meals (Safeway's warped version of it at least ) and thought it would be fun to post what we made for dinner and the approximate cost of it.

    Here's mine:
Salmon loaf using 2 cans salmon (FREE), 2 carrots (.10), 1 zuchinni (.25), 1 sleeve of crackers (.25), dash of lemon juice (.02), and some milk (.10)

Baked potatoes (.40) with plain yogurt (.20) and chives (free from the garden)

Green salad (free from the garden) and choice of salad dressings (.30)

    Ice Water or Tea (.04)

Total $1.66 for the whole meal!
The salmon loaf is big enough to fit in a big pyrex casserole dish and feeds my crew with leftovers. I baked 10 potatoes so that we would have extras for a quick meal tomorrow.

We had roast beef sandwiches...not extra frugal, but cheaper than ordering pizza.

6 roast beef sandwiches--about $7,00 including meat and 6 big buns. The salad I added to them was free. I do have left over meat for at least 3 other sandwiches for tomorrow.

The DSs went camping with friends, so it was just DH and me. We had baked chicken (used half of a 2.07 chicken), free green beans, pasta roni (half of a .20 box) and watermelon (about .20). So, dinner for us was roughly 1.45.

Even if we had all eaten, we still would have come in at about $3.00 or so. This is MUCH better than the 9.75 for Safeway's meal!

This is a great thread! Maybe we could make it a daily one?

Dinner for us on Wednesday was chicken croquettes from leftover chicken that I had cooked the night before. I used 2 boneless breasts, probably about a 1/2 a pound that was $2.49 a pound on sale so---$1.25

Mashed potatoes from the produce outlet-$1.25 for a 5 lb bag. I made 5 lbs, but had about half leftover for tonight--$.85 including the butter and milk I added to them.

Corn on the cob-leftover from the night before. Did you know you can reheat it in the microwave and it is still just as delicious as the night before? 6 ears reheated---$1.88

    Salad for me-lettuce only-$.75 per head-$.10

Approximately $.79 per person! (Includes Courtney, who ate alot last night, lol)

WOW This was a great idea!
