Questions on Fresh Yeast.
How do you keep fresh yeast and how long does it last for? In a recipe can I use the same amount of fresh yeast as dried yeast? Can you use fresh yeast in a breadmaker and leave the bread to cook overnight?
I have just found that our local supermarket sells fresh yeast at a seventh of the price of the cheapest dried yeast and I would like to use it if I can.

I dont really know as I use dried yeast when I make bread - my mum used to use fresh yeast and used to freeze it? I would check this out though as I dont know if freezing it will denature the yeast.
