    23. Use flat bags taped to your bench as a wonderful non-stick and disposable surface on which to roll pastry (you may need to still use a little flour). You can also cover your rolling pin tightly in it. The pastry peels off like the backing on prebought pastry sheets.

    I divide my pastry dough into chunks(one chunk=one pie crust)then I place each one in it's own plastic shopping bag and then chill in the fridge. When I'm ready to uuse one I roll it out inside the bag. Once I'm done rolling I cut down the sides of the bag, peel the plastic of one side of the dough, put it in the pie plate(dough side down), then peel the bag off. Pie shells are ready with no flouring your counter or rolling pin, and basically no clean up.

    Specifically what type of bag do you use? Does it roll out big enough to cover a pie plate? Are you concerned about the ink?
