Another meat substitute recipe!
Dear Friends,
The following is another recipe for a meat substitute and it's cheap to make and is really good too!
This recipe when you make it - tastes like sausage [and it really does too!]
Even my picky grandson [and I can not stress the word "picky" enough!] loved this and ate it and to me, that in itself was a miracle 'cuz I've never seen a pickier eater in my entire life. *lol*
I've shared this recipe several times over the years and have had ladies tell me that it has saved them more than once when they were tight on money.
The only suggestion I can give you for this recipe is to play around with it (it is sooooo incredibly cheap to make!) and see how your family likes it.
One tip I do have is that it seems to be much more like burger texture if you make the burgers ahead and put them in a ziploc baggie (even for part of a day, if not overnight).
Doing this has really helped tremendously with it having a more burger like texture.
I've readjusted the recipe (a titch less sage and have added chopped onions and some garlic powder, etc.) and have made them taste more like hamburgers -
just top patties with cheese slices and they are good that way too (I don't buy meat anymore - we use this in EVERYthing!)
Have used it in spaghetti, hamburger helper, etc. - the only thing that I made with it that my husband didn't care for,
was meatloaf and he said it was too dry and that I should have covered it with foil when I cooked it (which I plan on trying again).

I have also used the QUICK oats with no problems and also the bouillon powder and it works just as well as the bouillon cube.

(The recipe below will make it taste like sausage) - can also spice it up with hot pepper or italian seasoning - many different ways to adjust recipe and it is fast and easy.
If you find that there is too much water, just put less in.
** These are best when freshly made OR if you can keep them moist by putting in ziploc baggie or covered bowl if you want to store them.
They can be reheated easily in microwave (reheats in about 40 seconds).

This recipe was gotten out of a book called "We Pulled Together and Won" which is about families back home during World War two. The recipe was developed by a college girl in 1944.
She was earning room and board by cooking for a faculty member's family. With rationing meat was in short supply so she had to get creative.
So HERE 'Tis :-)
1 cup rolled oats (long cooking oatmeal),
1/2 teaspoon salt,
1/2 teaspoon sage,
2 eggs beaten,
2 tablespoons butter [margarine can be substituted for butter],
1 beef bouillon cube.
Mix the oats, salt, sage and eggs; form into four flat patties. Fry in the butter until browned on both sides.
In a kettle or saucepan, boil 1 qt. water and add bouillon cube.
Pour mixture over patties; simmer, covered for 30 minutes.
Doubles or triples easily. I've froze them and they freeze just fine too!
The first time I fixed them for my kids they enjoyed them and did not suspect anything.
** One more note: I always use LESS water and have had no problems (maybe it uses less water when using instant oatmeal?)
At any rate, it's easy to make and the best suggestion I can give you is to try it and adjust until you get it the way your family likes it ...
it is soooo worth the effort. It's healthier for you (and the family) and also is MUCH CHEAPER! :-)
** If you'd prefer, you can use non-fat cooking spray [like Pam] in place of the butter or margarine, that's what I do and it works just fine!

I tried it the other night, but instead of making burgers I fried it up like ground beef and added it to chili. The kids didn't even notice it and hubby just thought it was lamb instead of beef. This recipe is definitly a keeper. Thank you so much!

This sounds great, I can't wait to try it. Here is another recipe to stretch your ground beef. Its not quite as thrifty though. This is also a wartime recipe used when meat was rationed.
Hamburger Stretch
1 lb ground beef
2 c oatmeal
some onion, grated
1 egg
