    Default A little inspiration goes a long way

    I feel like Amy D. today! Someone somewhere on this board was talking about using up potatoes that are cheap this time of year. It motivated me to do something with the 10lbs I got for 2.00. I made 2 meals of twice baked potatoes and froze one. Tomorrow I am going to cut up the rest and quick fry as hashbrowns and freeze.

    Then I used a 2lb block of velveeta that expired aug.6 and made a hug pot of mac n cheeze and froze in individual containers for dd as this is her favorite lunch meal when she is not at school. That felt really good. Literally like not throwing 5.00 down the drain!

    Then I pulled out ingredients for the crock pot lasagna recipe someone posted here and a roast for another day in the crockpot and to top it off I crocked bbq ribs and served with the twice baked and a fresh salad mostly from our garden for supper.

    I managed to force myself to hang some laundry(did pop one in dryer as I was behind and wanted to catch up)
    I got bed made, kept all dishes cleaned as was done using them, baked lemon poppy seed muffins for breakfast, and used leftover chicken and pudding for my lunch since I was in the no waste mood. So I guess I saved about 10.00 today by not using and using up. That feels good. Hmmm I wonder if I could save 10.00 everyday if I made it a point in the morning to get in that mindset?

    You did great!! I am glad you were able to use up your food items before they expired. I hate throwing food away.

    Thanks for the good ideas about the potatoes. I have gotten frustrated about having to throw old potatoes away. I need to make some dishes like you did and freeze them. Anyone know if potato soup freezes very well?

    I freeze mashed potatoes all the time. I cook a dutch oven full, mash them with no milk or butter and then when I use them I add the extras - just like fresh cooked mashed potatoes and so handy to pull out when you are in a hurry or don't feel like cooking.

    That's really awesome. You did a great job. You gave me some ideas for using up potatoes, and Marei, I loved the idea for the mashed potatoes. I had never thought of that.

    Thanks Marei for the good idea about mashed potatoes. I had never thought of that. I was curious about things like potato soup cause have had heard that dairy products don't freeze well. But if I had the frozen mashed potatoes could just add the other ingredients. Mayhbe now I can buy potatoes and not have them spoiling.

    Sounds like a very productive day! I wasn't so good today, I'm not feeling 100% (didn't even get all my Pilates finished, which means something's wrong ).

    Wow, That's impressive. A store in our area has a special this week for buying $10.00 worth of items, have your store card and get a free 5lb. bag of potatoes. That sounds good to me.
