Some of my favorite, low-cost, low-fat, high fiber foods are:
Oatmeal
Beans
Ground turkey (high protein, but no fiber)
skinless chicken breast (high protein, no fiber, stock up when on sale)
Carrots
Cabbage
Broccolli
Bananas
Sweet potatoes (high fiber and loaded with vitamins!)

If you haven't already, switch over to a high-quality whole wheat bread (first ingredient should be whole wheat flour, not just wheat flour) and wheat blend pasta.
“When you get to the end of all the light you know
and it's time to step into the darkness of the unknown,
faith is knowing that one of two things will happen:
you will be given something solid to stand on,
or you will be taught how to fly.” - Edward Teller
“Our Earth is degenerate in these later days;
there are signs that the world is speedily
coming to an end;
bribery and corruption are common; children no
longer obey their parents;
every man wants to write a book and the
end of the world is evidently approaching.”

God, grant me the serenity to accept the things I cannot change,
courage to change the things I can,
and the wisdom to know the difference.

I just eat half of what I normally eat. If I'm used to eating two eggs, two slices of bacon, and two slices of toast, I just eat one of each. No matter what I'm eating I simply eat half the amount I would normally eat. I find this to be a fast, easy, simple way to lose weight.

My trick that has worked very effectively for me is to only eat fruit or veggies between meals. Not outrageouls expensive if you compare it to standard snack food. You can used canned fruit also as long as you get the type canned in juice, not syrup.

I eat all of the same foods, just really pay attention to portion sizes. I'm a calorie counter, and I use a free website (www.fitday.com) to keep track of what I've eaten for the day and how many calories I still have left. Some days I'll go overboard at lunch, so I have to eat half as much of something at dinner time, but that's a sacrifice I'm willing to make.
This way, my family doesn't have to join a diet plan they don't want to simply because I refuse to cook 2 meals

Definately cut back your portions to half off what you usually eat and I suggest cutting out as much sugar as you can. No sodas, no candy, no canned fruits in sugar. We only eat the high quality whole wheat now, but instead of a whole sandwich I will be doing a half sandwich. Eat more natural fruit.

I lost over 100 lbs. eating half of what I normally ate. I also didn't eat anything I really don't like and chose my carbs wisely. I mean if I went out for a fried seafood platter I would eat the shrimp and scallops first. It's what I like the best, I would then skip the baked potato, butter and sour cream because the of the breading and fat on the seafood. It works, after awhile that sense of accomplishment of cleaning my plate was gone and new sense of accomplishment took it's place.
I also did not totally eliminate sweets I like them, so I would just have a smaller portions. It took a couple of years to lose the weight but I never did gain it back. I have posted this before but I can't post it enough if you stick to it and climb back on the wagon if you fall off it will work!
As far as snacks the same applied I used eat 1/2 dozen or more cookies at a clip. I tried to replace them with fresh fruit and when I did eat them anyway I tried to stick with 2 or 3. One more thing I never ever had anything to drink with sugar in it. I stuck with diet but that was it, I ate everything my family ate and still lost all that weight.
