    Default OAMC'd some muffins!

    Go ME! I made 2 batches of apple muffins (24) and 1 batch of strawberry muffins (12) using only 1 apple and a few strawberries (1 cup). I had a revelation of how cheap this was to make. Scratch ingredients-basics like flour, sugar, salt, etc and a piece of fruit. Amazing. I have been off my cooking wagon since I started working full time. I miss it so much.

    Wait until Ashlee comes home from work tonight at 11:00 and sees muffins, she'll think she's in the wrong house lol!

    I did freeze 16 of the apple muffins before DD's get to them and I'm waiting for the others to cool. I'm on my way to stocking my freezer! Baby steps....

    You go girl. Great job. Love to make muffins and breads with very little money spent. When I juice fruit for jelly I save the pulp and freeze it then when I want strawberry and raspberry muffins all I have to do is thaw out what I'll use.

    Way to go!! I know I've fallen off the baking wagon and miss it. Hoping to start again SOON! I'm gonna make a big pot of soup this weekend and cook down a whole bunch of beans for meal size freezing. So, hopefully will get to it next weekend!
