Default 0k with dh going to Texas this summer

it will just be yds and me at home. Plus 4 cats. Ods will be going to his 2nd yr of college in August.I am worried,I wont be cooking like I do now as it would be a waste of time and food. I dont want it to be like :hey its the two of us so lets do frozen pizza too. Any suggestions? I am thinking I may be able to find a cookbook at a yardsale about cooking for 2. Any other ideas

Well Gripey and I eat very 'simply' most of the time now. We eat breakfast for dinner about once a week, salads with some sort of meat on top, ham or turkey wraps (in whole wheat tortillas), beans, etc..... . Lots of fresh fruits and veggies. Very easy most of the time.

~48 yr. old sahw, livin' it up in our empty nest, smack dab in the middle of everywhere.~

I am still trying to figure out how much leftovers to make so I am not eating them for 2 months. But I do like being able to have the flexibility of pulling stuff out of the freezer already made.

Only one here so alot of times it is easy stuff that I make. Also, creamed chicken can be used in pot pie, over waffles, or by itself. That way things don't get boring.

How about doing some OAMC ~ you could pull out just what you need for one meal
