    Default Got Buffalo Recipes?

DH and I ordered and rec'd a 1/4 buffalo this weekend. Does anyone have any good recipes? I have never cooked buffalo, although I've read it cooks faster than beef. For the most part, I can replace the buffalo ground meat for beef hamburger, but does anyone have any recipes you would like to share?

    Thanks!

I use the same recipes. I make sure though, that since the buffalo is very very lean and doesn't have the fat to "protect" it does better with a high heat FAST cook approach. So don't plan on cooking it well done if you are doing a steak or ground form.

If you have a roast to cook. Put some strips of bacon on top (I do this with venison) and wrap it in foil then cook it. It will help keep the moisture in so it doesn't dry out.

Just curious - HOW did you get to buy part of a buffalo? I think it's great!

There is a ranch east of Denver. We went in with 8 other people (we were the only ones to get 1/4). It averages to be $ .50 lb more than beef, but so worth it! You could probably google buffalo ranches in your area if you are interested.

I use buffalo (unfortunately it is commercial brand) wherever I would normally use hamburger- enjoy and kudos to you for buying local !

Wow, here we can get it as low as .89 a ib for the ground. I use it for stew and bbq buffalo sandwiches.

I've never heard of Buffalo being so cheap! Good for you! To buy it in the store, you are lucky to get ground buffalo on sale for $4.99 lb!
