    Default favorite lunch (lasts two days!)

    I mix a can of chick peas (organic if possible, or better yet, cooked up from dry)-
    w/ chopped cukes and tomatoes and whatever else that I have in the crisper-
    sprinkle w a little feta
    drizzle w/olive oil and balsamic (or my personal fave newmans red wine vinegar reduced fat)
    voila'
    yummy and healthy- even my naturopath gives this 2 thumbs up

    (and a can of beans lasts me 2 lunches!)

    One of my favorites as well! With a slight variation. I use fresh lemon or lime juice, olive oil and fresh minced garlic. I also like to have it, along with some fresh spinach, wrapped in a tortilla. Most of my lunches are some variation of beans and veggies! I cook up a batch of beans in the crockpot each week and have them on hand. Garbanzo beans are my favorite! I also like them on pizza, with cucumber, tomato, spinach, garlic and cheese. yummy!

    Yum...that sounds delicious and healthy. I may try it with some of the variations ShawnaRae suggested. I think it would be good with kalamata olives, and served with warm pita bread too. Thanks for sharing!

    I am eating this for lunch as I type. It is SO good! Thank you for posting the recipe.

    I used zucchini instead of cukes, and added some sliced red bell pepper, green onions, and a bit of cilantro. I also used garlic and herb flavored feta cheese. I agree with the OP...it makes two lunches. I didn't think it sounded like it made enough for two meals either, but by the time you add the veggies, it does. Yum!

    Thanks for posting Phaeble, it's one of my fav salads! Mine has chick peas, tomato, red onion, feta chunks and a light on oil homemade vinagrette. When the salad sits for a while & gets stirred the feta breaks down a bit it salts the salad just right. If anyone wants I can post my dressing recipe. Can't wait for the cherry tomatoes to come in, this will be a staple.

    Wow it sounds delicious. Garbanzo beans were just $10/10 and I have feta on hand. Think this sounds like lunch tomorrow.
