    Thumbs up baked Potatoes again

Everyone by now knows that I always bake about 12 potatoes... you know the old way, a bit of olive oil, poke and sea salt.. 400 for 1 hour. We eat four the first night and the rest go in a baggie in the fridge.
I sometimes make potatoe salad..scoop it out and save the skins for potatoe skins..
This time, I scooped them.. Warmed them a bit to make a quick mash..leftover barbeque (pork butt from crock pot) and some onions.. repacked the potatoe skin.. sprinkled with cheese.. (could put more bq sauce...) and baked till warm.. served with ranch...
    great..
and even better they were good the next day cold..
So if you try them let me know how you liked them

Great idea. I rarely make baked potatoes, but now I am in mood for them! Great summer meal! Thanks!
