    Question Help for dinner needed! What to do with Salmon filet???

    Hi All,

    A while back I got a good deal on some fresh Salmon filets (reg. $7.99/lb, marked down to $2.99/lb) - I have one thawed out for dinner tonight (right at 1 lb), but have no idea what to do with it!

    Anyone have a quick and easy idea or recipe? Thanks so much!

    Salmon is good on the grill. We don't have a grill right now, so I usually just throw my salmon fillet in a saute pan with a tablespoon or so of olive oil (preheat pan and oil over mediumto medium high heat). Season the fillet with fresh ground pepper, kosher salt (or regular salt will do), then garlic powder, and whatever else you want. Try chili powder and a squeeze of lime juice, sometime. The fish cooks quickly, about 5 minutes on each side. If it has the skin on, cook it that way, the skin peels off easily after cooking. I cook mine flesh side down first to sear it, then flip it over so it is skin side down. At this point, I add about a tablespoon of water in the pan, and cover while cooking the second side. This will "steam-cook" it the rest of the way. Do not overcook your salmon. It takes only 10-12 minutes total. It is a good meal on busy or late nights, because it cooks so quickly.

    The only way my son will eat fresh salmon is if I make it into patties, so I cook the salmon and flake it off the skin then add bread crumbs, egg, milk, some onion and red pepper, seasonings. It is a good way to stretch it out too.

    I love pan-seared salmon... cooked pretty much as imcheap describes. I don't add water to mine though and I like to marinate it in teriyaki sauce sometimes. Steam some veggies, add basmati rice... yummy! Or, grill it and the veggies with olive oil and spices!

    Thanks folks! I knew I'd get some good ideas here - I'm going to try the pan-seared tonight and then the next time we have it I'm going to make the salmon patties!
