Tuna salad
2-4 eggs ($1 a dozen for eggs)
mayo (.10 for a spoonful)
tuna (.60 a can)
sweet relish (.10 a spoonful)
Mix and eat with saltines, tortillas, or a couple of slices of bread.

~Fajita Rice
6-8 oz leftover flank steak or london broil cut in thin strips($1.50lb sale)=$.75
1/2 red pepper cut in very thin strips=$.35
1 onion cut in strips=$.15
juice of 1/2 lime(6/$1)=$.10
pepper, cayenne pepper, paprika, salt, garlic powder
2 TB oil = $.02
1 cup dry rice cooked in water=$.10?
3/4 cup salsa=$.40
1/2 cup shredded cheese($2lb or less)=$.15
= $2.02
I made this two nights ago and it fed dh and I very well with enough rice leftover for my lunch the next day.~~Constance

I can feed 3 of us for under $4 with leftovers, lol
- Elbow noodles (.59) w/marinara sauce ($1) and parmesan cheese approx. $2 for 2 nights meals
- Same as above but add ground beef add $2 = $4
- Arroz con quandulles (sp?) (rice, olives, homemade sofrito, water, pigeon peas) approx. $2 BUT this will last 3-4 days!
- White rice (.10 per cup so 50 cents), pink beans (.59) and chicken legs ($2.59), I would say this costs approx. $4 but feeds 3 for 2 days.
- Mac & Cheese with sausage - $4
I can get pretty creative too!

I did this last weekend for hubby and I on date night, I bout a marked down rib eye for 2.00 i sliced it thinly and put it over a salad, i took veggies from garden and made a salad, and bought marked down hoagie rolls .99 for 6 i used 1 that i sliced and made brussetta from garden tomato's and basil. We had a wonderful meal for under 3. Doing the same thing this week for 4 people with the tri tip i picked up yesturday in marked down meat section. I have the 5 hoagie rolls in the freezer.

Breakfast for dinner: homemade biscuits with butter and honey/jelly, eggs, and sausage links.
The sausage links I can usually find for under $1, eggs are less than $1 a dozen, and biscuit ingredients shouldn't be more than $1-2, so that's $4 for a meal that'll feed two people and keep 'em full...especially if you're like me and can eat several biscuits.

I'm ashamed to say that I don't really know how much the olive oil and seasoning come to. I've never figured out the price of these!
White Beans w/rice
1/2 lb. dried large lima beans ($.50)
1 medium onion-chopped ($.20)
1/2 green pepper-chopped (from my garden/freezer)
1 stalk celery-chopped ($.15)
2 cloves garlic-minced ($.15)
4 oz. tasso-diced ($.75-on sale)
olive oil (?)
Creole seasoning (?)
2 c. cooked rice ($.50-we use brown, white would be much cheaper!)
Soak beans overnight.
Cover bottom of heavy sauce pot with oil, saute vegetables and tasso till limp.
Add beans and cook over low heat several hours until the beans are soft and you have a nice creamy sauce.
Serve over hot rice.
If company's coming or we have it on hand I'll add a bit of smoked andouille sausage. I like to serve this with homemade cornbread and, if I have them, greens from the garden. It's good with fresh sliced tomatoes too.

Has anyone mentioned baked potato bar? Shredded cheese, steamed veggie of choice (broccoli here); chopped bacon bits (I get a huge bag at Sam's and keep it in the freezer for months; a couple of slices of fresh would be even more delicious). You could go 'vegetarian' by omitting the bacon and adding a bigger variety of veggies or fresh salad; or make some inexpensive chili for a heartier, meatier version. I've never calculated the cost but I know it's less than $1 per person when you get everything on sale.
How about burritos made with homemade tortillas?
Homemade pizza also comes in pretty cheap. The most expensive ingredient on mine is turkey pepperoni (much lower in fat than the regular kind so worth the extra cost in terms of health). I get a small bag for $4 but stretch it across three or four pizzas by chopping it into bits and scattering it across the pizza instead of using the whole circles.

I was at the deli yesturday and i thought of a fruit and cheese plate would make a great late night dinner. Get some fruit grapes or pears etc that are in season then go over to the cheese counter and get sliced cheese enough for two 4 or 8 thin slices. Maybe some nice Bagel Chips or Melba toast
