    Lightbulb Leftover Turkey Recipes

    I bought a 19 pound turkey this year and dh is not fond of it. I need all the help I can get to try and use it up. I plan on freezing some "TV Dinners" for myself as I love turkey dinner with all the fixings, but what do I do with the other 15-16 pounds!

    Ok ladies this is the thread to post all of your turkey leftover recipes. I'm sure we could all use some help in disguising turkey, so please POST AWAY for the rest of us..........................

    In the book "Miserly Meals", they have the 12 days of turkey. I just read it last night. Something different everyday. I'll get it out and post some of the ideas later. I saw a recipe somewhere for turkey "pot pie". It used biscuits and you cook them in muffin cups. I'll look and post here later.

    if u have a food saver just freeze the meat in 1 or 2 lb batches..it will keep a long time

    Here's a couple of Ideas, mix leftover turkey with some gravy or chicken gravy, add some parsley and mix with cooked spagetti noodles makes a quick dinner.

    Sweet & Sour sauce for meatballs,leftover turkey,chicken, or ham. yummy

    1 tbsp cooking oil
    3/4-1 C pineapple juice
    2 tbsp cornstarch
    1/2 C sugar (I use less)
    2 tsp soy sauce
    2 tbsp white vinegar
    1/4 C water
    1 can pineapple tidbits
    1/4- 1/2 green pepper sliced thin

    beat oil and pineapple juice together. Add all other ingredients except pineapple, pepper, and meat. Cook and stir until thick, add rest of ingredients heat until hot. Serve over cooked rice

    I make my rice in the oven..preheat to 350 for each cup of rice add 2 cups boiling water, put in sprayed pan cover with foil bake 30 min. perfect rice

    I get my rice done then start the sauce on low heat and by the time the rice is done so is the sauce.

    turkey stir fry
    turkey tetrazeni
    turkey hash
    turkey pot pie

    I'll have to think of some more

    I got this idea from the TV show "Friends".

    For turkey sandwiches, soak one slice of bread in gravy, and put it in the middle between the turkey, cheese or whatever, and the other two bread slices.

    Dh loves it.

    Day-after Turkey Muffin Cups

    1/4 C finely chopped celery
    3 Tblsp chopped green pepper
    1/4 C chopped onion
    1 Tblsp margarine
    2 C cooked, chopped turkey
    2 Tblsp mayonnaise
    1/2 tsp salt
    1/2 C chopped almonds
    1 can (10 count) refrigerator biscuits.

    Saute celery, pepper, onion and margarine until tender. Add turkey, mayo, salt & almonds. Mix thoroghly. Place biscuits in greased muffin pan. Press biscuit dough evenly into cups. Spoon turkey mixture evenly into cups. Bake at 350 for 15-20 minutes until biscuits are light brown.

    Here's another recipe. Got this from the Campbell's recipe booklet I just got in the mail.

    2-step Inside-out Chicken Pot Pie

    Use turkey instead of chicken.

    About 2 cups turkey cut up
    1 can cream of chicken or cream of mushroom soup
    1 bag frozen veg. (broccoli, cauliflower & carrots)
    Heat until hot and veggies are done.
    Serve on biscuits.

    Can't wait to try this one. It looks really good in the picture.

    Add to a salad, pita bread, or make wraps. Instead of chicken, just think turkey, turkey, turkey. LOL
