How many ways can you think of to use leftover chicken?
My favorite way to use leftover chicken is in chicken fajitas, but there are so many other possibilities. How many ways can you think of to use leftover chicken?

With leftover chicken I have made:
chicken fried rice
chicken tortilla soup (very healthy recipe)
chicken quesadillas
cheesy chicken n rice casserole
chicken noodle soup
chicken and noodles
chicken pot pieMcD

I used the chicken itself for sandwiches or chicken salad or my favorite soup.
I put the carcus in a pot with a bay leaf, some carrot and celery ends from the freezer with some pepper corns, salt and pepper and simmer until the bones fall apart. I then strain and add cooked chicken to the stock. Sometimes I will thicken with equal parts flour and margarine and sometimes I will add pasta.

empanadas (good for any left over meat or veg)
usually we just put it on a plate and reheat it as a lunch or snack.Use it up, Wear it out,

chicken & veggie stir fry over rice
chicken & bean/cheese burritos
add to homemade egg rolls
add to fettuccine alfredo
I pretty much do what the other posters said too. Soup, sandwiches, etc.

chicken salad with mayo and tarragon
then chicken soup at the end.11% gross to retirement
10% takehome to tithe and offerings
emergency fund maintained at 3000(works for me)
credit card debt 7500
mortgage free
freedom accounts/sinking funds that ebb and flow
then live on the rest!
i am trying something new. LDS church advises savings or debt repayment should be the same as the tithe. 10% each.

Chicken and waffles. MMM that is the best use of left over chicken. PA Dutch style of course. Chicken in a gravy with fresh made waffles
