If he doesn't eat the peppers, you can do what my Mom did - I wouldn't eat the peppers either - make up the meat mix, cook some beside the stuffed peppers... it got the taste without actually having to touch the pepper

For sides, salad, or veggies and mashed potatoes

Another simple dish is BBQ cups.
Brown ground meat. (drain)
Add chopped onions and BBQ sauce.
In a muffin tin, put down cheap can biscuits (push down and make come up the sides) Fill cups with meat mixture. Top with 1/4 slice of American cheese (shredded whatever you have)
Bake according to biscuit directions. Let cool for a few minutes and then take out. My bunch loves these. Good with a salad and vegetable.Jan

Meatballs Marsala: make meatballs, make a brown mushroom gravy and add 1/3 cup of Marsala wine. Let this cook down a bit and add meatballs as it simmers. Serve over rice or noodles.

Growing up this was German Hamburger:
brown ground beef in a skillet with some fine diced onion
serve with baked beans on top
It was one of my favorites and I haven't thought of it in a long while. It was probably served with bread to sop up the juices and who knows if there was a vegetable with it. lol

i made them kinda like meatballs, and wrap them in bacon..
or do a meatball sub with motz cheese,
kebobs ( you have to look up recipe) they are kinda spicey but good
spanish couple i know make the groundbeef with spices and mixes with cubed fried potatoes mixed in

Dad ended up dropping brother off and giving us $20 for dinner so pizza it was for us tonight, but tomorrow, thats almost story! German hamburger sounds good! DH and I are both German and that sounds great Cea!!!

You can make some crockpot sloppy joe meat and eat it over rice. It pairs nice with some steamed corn.

Lasagna with meat sauce, beef stroganof, I do a what do I have and add it to ground beef-garlic, onions, green peppers, red peppers, roasted peppers, tomatoes, salsa, soups, broth, rice, pasta, egg noodles, spinach any type of frozen veg or fresh or whatever you have. Check out foodnetwork, they have a million recipes for ground beef.

There are close to 3000 ground beef recipes on Taste of Home. I love their site and their recipes.
You can also make a ton of soups with hamburger--chili, veggie soup, etc. And chili doesn't have to be eaten as soup! You can serve it over salad and make it a southwestern style salad. You can serve it over rice, baked potatoes, hot dogs, etc.McD

hamburger rice casserole
hamburger
rice
broth or bullion
frozen veggies
onions
garlic
spices
water (if you are using bullion)
Cook the hamburger and drain the grease. Put in a pot. Add in your rice, water, bullion, onions and garlic, and spices. Let it cook until the rice is almost done. Add in your veggies and let them thaw and cook a little. Serve.
Side notes:
I use a lb of hamburger, 4 cups of rice, 9 cups of water or broth, and a lb bag of frozen veggies. This feeds the five of us and DH's lunch for the next day. Sometimes, we have a little more than that leftover, depending on how hungry the guys are.
You can use whatever spices sound good to you. I tend to use Italian seasonings. Curry would be good in it.
The hamburger we have right now is really lean and so I just boil it and then add in the rice and stuff when the meat is cooked.
You can use canned veggies. Drain the liquid out and use it as part of the water to cook the rice in.
I love this recipe because it is very flexible. And, if you have too much leftover, add in some extra broth/bullion and make a soup out of it later in the week.Beak-1996, Toad-1998, and Q-1998

Spanish rice. My mom also used to make up a dish that used hamburger, onion, green peppers, potatoes cut in small chunks (simmer the potatoes in water till done) Add the taters to the meat mixture and then add a can of tomato soup. It was really tasty and you can add whatever spices you would like. My mom was a salt and pepper user for the most part.
