10 mins *or less* and about $0.70 a serving!
last night when DH got home late I was beyond starved *DD was asleep already* and had limited pantry items, he was hungry too and I was NOT about to let him go get a pizza for $10+
so I set a pot of water to boil
got out a bag of frozen kroger brand stir fry veggies *on sale .80* put it in a bowl and microwaved on high for 3 mins
started chopping some garlic very fine about 2-3 cloves
stirred the veggies after the 3 mins and put in for another 3 mins
I took half a pound of great value brand *walmart* vermicelli the box was .88 and dropped in the water
grabbed some basil and chives from the garden chopped the chives and gave the basil a chiffonade
when the pasta was drained I put the garlic in the bottom of a serving bowl put the pasta on top so the warm pasta would just BARELY cook the garlic a little
drained thoroughly the now HOT veggie medley and put that on top
added a pinch of salt a LOT of black pepper and some red pepper flakes
although you could easily leave that out and add some lemon zest drizzled a few tsp of olive oil on the pasta, tossed with tongs, sprinkled with herbs
SUPER fast
super healthy
and SOOOOO CHEAP
of course you could add cooked chicken or even canned tuna if you had it around and wanted to add protein but this was more out of speed b/c we were so HUNGRY lol

I have a quickie one i made yesterday.. pasta cooked. 1 jar of alfredo sauce (you can make your own) in a pan i threw in 1 chicken breast and started to boil, then when almost done, pull out and cut in small pieces, and put back in pan with a whole bag of frozen brocolli, add water and boil till tender. drained and tossed it all with the alfredo and noodles. It made a whole lot and was delicious..
i will give yours a try.. got some great basil in my garden..

Such cool sounding QUICK meals...perfect for summer time weather!! I'm gonna have to give both of these a try!!
