    Many times I have just used the pork with the broth and just added rice and some cream of mushroom soup. Add in whatever extra seasonings you like. Cook until the rice has absorbed the broth. You could also do this with dumplings instead of rice.

    I also do this with chicken.

    I know you asked for casserole and soup ideas but I still wanted to throw this out there.

    All 3 of my guys like pork steak best as leftovers made into barbecue sandwiches. Very easy!

    I use leftover pork in goulash instead of beef.
