    Try this with your leftover meats and veggies.

    Get a container or use freezer bags and start saving your cooked leftover vegetables. In another save your raw parts. (tips or ends of veggies) In another container or freezer bag save your cooked meat or chicken. At the end of the week/month take out the vegetables from the freezer and place in a pot and boil. Strain out the undesireable vegetables and you should be left with a good stock. Add your leftover meat or chicken and simmer.

    You can use this stock for soup or stews. You can add some rice, noodles, or some potatoes.

    Try not to waste anything.

    Here's another good recipe for leftovers. I'll make this dish to use up leftover, slightly dried-out rice from takeout/doggie-bag Chinese food. Once the rice is mixed in and baked, it's yummy again! And somehow, I usually seem to have the basic ingredients for this dish on hand....


    Cheesy Bean and Tortilla Bake

    Ingredients:
    - 1 can spicy refried beans or black beans
    - rice (this recipe is perfect for using up leftover takeout rice, however much you have on hand)
    - cooked/roasted, shredded chicken (optional)
    - tortillas (preferably) or corn chips
    - salsa or tomato sauce
    - shredded cheese: Cheddar, Muenster, Mozzarella are all good

    Directions:
    In a 13 x 9 inch pan, layer tomato sauce, 1/3 of each beans, rice, grated cheese, chicken (if using), tortilla slices and salsa. Repeat two more times. End with salsa and top with cheese. Cover with foil. Bake at 350º for 25 - 30 minutes. Serve with guacamole, if desired.

    I just leftover meatloaf to make spaghetti sauce or use to make chili.
