Streeeeeeeeeeeeeetch That Chicken!
Have a whole chicken and need to make it last? Here are some ideas.

1. Roast the chicken in your favorite manner. Serve with plenty of side dishes to ensure that there is leftover chicken.

2. Make a chicken casserole dish with some of the leftover chicken.

3. Chop up the rest of the cooked chicken. Depending on how much is left, use it for:

a) Chicken salad sandwiches for lunches

b) Chicken burritos or tacos

c) Chicken salad

d) A different chicken casserole

e) Stir fry or fried rice

4. Take the chicken carcass and make chicken broth. Use that to make soup of some variety, with or without leftover cooked chicken

Great ideas...I've been doing this for years...now that there are only 3 of us at home, that chicken seems to go a lot farther.

Roast the chicken and serve meaty pieces. Then serve scrappy pieces creamed over noodles, or toast. Then tiny bits in shepherd's pie, or fried rice, and finally--- boil the carcass and make soup-- usually chicken rice or chicken noodle.

Gotta remember to do this next time I have left over chicken. We always try to eat the leftovers the next day for lunch but don't always get to so this is a good plan. Thanks.
