    Default Simple, Frugal Comfort Food

    The weather here is just plain yucky today and I'm feeling the winter blahs so naturally I turn to food.

    I made one of my favorite meals today and just thought I'd share. It's really not a recipe with measurements, but more trial and error. You can make a meal for pennies.

    To me, Potato Soup, means warmth, love and healing.

    First I browned about 1/3 of a red onion in butter in a sauce pan.
    Add several sliced potatoes (I used 4 small potatoes) and enough water to cover.
    Add salt and pepper to suit your taste.
    Let boil until potatoes are soft and the water has begun to reduce.
    Turn down heat and add milk to get the consistancy you like.
    Serve with cheese toast and a glass of tea.

    Yum

    This makes me 2 good size bowls of soup. Use more onion and more potatoes for larger quantities.

    Pat,
    I love potato soup! I reach for comfort foods also when I am feeling down. One of the easiest to make is milk toast. Just made yourself a piece of toast and butter it. Put it in a bowl and pour some hot milk over it. Salt to taste. My mom got me started on this as a young child. She said they used to eat it back in Boston and Maine quite a bit with her family.

    Sounds yummy. Have you ever noticed that comfort foods are usually very frugal as well? Our moms knew what they were doing!

    One of my favorite comfort foods is bangers and mash (aka grilled sausages and mashed potato). It's really simple and very frugal if sausages are on sale (like they were last week!). I usually grill (or broil) two sausages per person. Serve with a bit of gravy and some peas, cabbage or green beens. It's English comfort food!

    My favourite all time frugal comfort food (and the first thing I ever cooked DH) is colcannon. Mashed potato and cabbage with gravy, I feel like eating it whenever it's cold and wet and windy - which up here in the hills of lancashire is pretty frequently!

    Mmmm Sausage Casserole with yorkshire pudding and mashed potatoes. Always goes down well when its cold outside and the kids come home from school.

    Oh I used to eat chipped beef on toast with gravy at home often. I had completely forgot about how yummy that is. Thanks for reminding me. I'll have to make that soon.

    We eat cream of chicken soup over toast. It's not my very fav. comfort food but when you're feeling a bit yucky and need something easy and good it fits the bill. Potato soup is my fav. though, homemade much like your's Pat.

    ~48 yr. old sahw, livin' it up in our empty nest, smack dab in the middle of everywhere.~

    I love bangers and mash!!!! All of the comfort foods people have shared here are ones that I too enjoy!
