    Default Unfried french fries

    UN-FRIED FRENCH FRIES


    5 large baking potatoes
    Light vegetable oil spray
    2 large egg whites
    1 Tbs Cajun spice

    Preheat the oven to 400°F.

    Slice each potato lengthwise into 1/4" ovals, then slice each oval lengthwise
    into matchsticks.

    Coat a baking sheet with 3 sprays of the vegetable oil.

    Combine the egg whites and Cajun spice in a bowl. Add the matchstick potatoes
    and mix to coat. Pour the coated potatoes onto the prepared baking sheet and
    spread them out into a single layer, leaving a little space between.

    Place the baking sheet on the bottom shelf of the oven. Bake for 40 to 45
    minutes, until the fries are crispy, turning them every 6 to 8 minutes with a
    spatula so that they brown evenly. Serve immediately.

    I have-- they are tasty, but not quite like regular french fries.

    I also make oven fries, but cut them larger and cook only 30 minutes at the same 400 degrees. Seems like those in the above recipe would be crispy critters, but maybe the egg white keeps them from burning.

    I take 1-1/2 to 2 pounds potatoes, cut lengthwise into about 8 wedges each and throw in a saved produce bag from the grocery store. You could use an expensive zip top bag if you haven't saved any clean produce bags. Pour in a Tablespoon or 2 of canola or whatever veg oil you like. Shake like crazy until all wedges are coated.

    Pour out onto a foil-lined cookie sheet for easy clean up. Arrange in a single layer with space between. I like to leave peelings on and place peel side down if the potatoes are fresh. If they're old or sunburned, or you just don't care for peels, go ahead and peel first.

    Then I sprinkle with kosher salt and bake in a 400 degree oven for about 30 minutes or until golden brown. You could use seasoned salt, paprika or your favorite dried herbs. (Fresh herbs are expensive and tend to burn in this application.)

    This is an easy meal with oven baked or "fried" chicken that likes to cook at the same 400 degrees. The two cookie sheets fit side by side on your oven rack, and all you need is a salad or green veg to complete your meal. You would put the chicken in first, up to 20 minutes before the potatoes for thighs; or boneless, skinless breasts can go in at the same time as the "fries".

    Most folks really like oven potato wedges, and they're healthier and easier than french fries.

    I've made french fries before. I've tried frying and the baking.
    Not sure, but prefer store! LOL
    Homemade just don't come out the same. But, that doesn't mean I do buy them!!!!!
