yummy, cheap quesadillas
I don't think this was very "authentic" mexican, but I threw this together tonight & it was good....so I thought I'd share with ya'll. The quantities are approximate.
(2 c) Leftover fried chicken gravy (LO from a family dinner with my folks way back when...made with dry milk reconstituted))
(2 c) leftover chicken de-boned & cubed (LO from same time)
(1/3 pint) salsa (home-grown, home-made, home canned)
1 small can green chili's (home-grown & canned)
(1 c) shredded cheddar cheese
4 burrito-sized flour tortillas (home-made)
I mixed the first ingredients & put on 1/2 the tortilla. Sprinkled cheese on top. folded it in half & fried it in a little butter in a skillet.
Everyone liked them. I'll do this again.......
It was CHEAP, too.
I also made home-made spanish rice (with HM tomato sauce) and had a jar of home-canned corn.
Maybe this method (LO gravy for sauce) isn't new, but I've never thought of it before.
I figure it cost about $1.50 for the whole meal.

Quesadillas are a great way to disguise leftovers!
I've used leftover pork, chicken, turkey, and beef.
I like to fry some onion and Anaheim peppers, and maybe some mushrooms, especially with beef quesadillas. With leftover seafood, fried zuchinni is good too.
My husband is sometimes leftover resistant, but he's happy and appreciative if it's disguised in a quesadilla, burrito or enchillada with a shredded lettuce and tomato salad.

~My DH like quesadillas, too. I make my own tortillas to reduce the cost. I also cook my quesadillas dry in the pan, they crisp up beautifully. I mix my leftover chicken with a small can of diced tomatoes with chilis(.50). I mix cheddar and monterary jack cheese shreds with a little chili powder, cilantro and cumin. I layer tortilla, cheese, chicken/tomatoes, more cheese and tortilla. Flipping it without spilling anything is pretty fun! It's the cheese that drives the price up. I probably use $1 worth when I make these for DH and I.~

Quesadillas are a staple around here. I make them with all kinds of leftovers. We like to make veggie quesadillas in the summer when the garden is producing, we just grill some marinated veggies on the grill and then make a quesadilla from them. Yummy.

That recipe sounds really yummy and frugal, too. MY kids and I like the ones I make with bacon, scrambled eggs and cheese.
