    Default THREE WAY DINNERS (GROUND BEEF)

    I was looking yesterday at a few old magazines which I have had for a bit and came across some three way dinners to make out of a 1997 Chatelaine magazine and I thought I would type them here for anyone who might be interested.

    Ground Beef

    Smartly seasoned beef and Meatloaf

    Preparation time 50 minutes
    Baking time 1 1/2 hours
    Makes 14 cups beef mixture, including a 9 slice meat loaf.

    Big Batch Seasoned Beef

    5 lbs lean ground beef
    1 large Spanish onion or 2 cooking onions
    6 to 8 green onions (optional)
    1 bunch of fresh parsley or 1/4 cup dried parsley
    4 large minced garlic cloves ( I buy my garlic already prepared in the jar)
    1 tbsp Worcestershire sauce
    1 tsp Tabasco or other hot sauce
    1 1/2 tsp salt
    1 tsp ground black pepper

    For Meatloaf and Burgers

    2 eggs, beaten
    1/2 cup rolled oats
    2/3 cup barbecue sauce, ketchup, or 10 oz can tomatoe soup

    (1) Big-batch seasoned beef==== Leave meat in the refrigerator so it remains cold while preparing ingredients. Finely chop Spanish onion and place in a large mixing bowl. Thinly slice green onions and add. Wash fresh parsley under cold running water. Spin in a salad spinner or pat dry with a tea towel. Finely chop and measure out about 1 cup. Add to onions with garlic, Worcestershire sauce and Tabasco. Sprinkle with salt and black pepper. Add beef. Using your hands, work onion mixture into beef.

    (2) Next-night Beefy Spanish rice ======== Place 3 cups of seasoned-beef mixture in a plastic bag, tightly seal and refrigerate to make rice the following day, or place in freezer to use whenever you want.

    (3) Meat Loaf =========== Add eggs and rolled oats to remaining beef mixture. Again work in with your hands until evenly mixed. Remove 4 cups of this mixture to make "Fabulous Freezer Burgers (see point #5), cover and refigerate.

    (4) Use all the remaining mixture in bowl for a meat loaf. Begin by greasing a 9x5 inch loaf pan or coat with cooking spray. Using your hands , work about 1/3 cup barbecue suace or ketchup or half of can of soup into meat mixture in bowl. Gently pack into loaf pan. Smooth top. Spoon remaing barbecue sauce , ketchup or soup into meat mixture in bowl. Gently pack into loaf pan. SMooth top. Spoon remaining barbecue sauce,ketchup or soup over meat loaf. Bake right away or refrigerate, covered, for up to 1 day. To bake, preheat oven to 350 degrees. Bake meat loaf, uncovered, on centre rack for 1 hour. Drain off an liquid, then continue baking until a knife feels very warm when inserted in the middle, about 30 more minutes.

    (5) Freezer Burgers =========Divide 4 cups of refrigerated mixture into 6 portions. Line a baking sheet with waxed paper. Shape mixture into burgers about 1 inch thick and 3 1/2 inches wide. Space slightly apart on a baking sheet. Place in freezer until firm, about 2 hours. Peel frozen burgers off waxed paper and place in a plastic bag. Removing as much air as possible, seal tightly and return to freezer.

    (6) Fabulous Freezer Burgers =======

    1 tbsp vegetable or olive oil
    6 cold or frozen freezer burgers
    2 tbsp all-purpose flour
    10-oz can consomme or beef broth, undiluted,or 1 cup of beef bouillon
    1/2 cup of red wine or water
    1/2 tsp dried leaf thyme
    1/4 tsp freshly ground black pepper.

    === Heat oil in a large frying pan set over medium-high heat. Add burgers in a single layer or do a few at a time. (Burgers will shrink during cooking, making more room in the pan.) Cook until browned, about 5 minutes per side for cold burgers or 8 minutes per side for frozen burgers. Then remove partially cooked burgers from pan and reduce heat to medium.
    === Sprinkle flour in pan and cook, stirring constantly , for 1 minute. Stir in undiluted consomme, red wine , thyme and pepper. Heat, scraping the bottom to get up all the browned bits, and stirring until sauce comes to a boil. Return burgers to pan and cover. Reduce heat to low anad simmer until burgers are no longer pink inside, about 10 to 12 minutes for cold burgers, 12 to 15 minutes for frozen burgers.
    For a classic dinner, serve burgers and wine sauce with mashed potatoes and green peas. Or for a kid-pleasing meal, serve burgers on a bun with gravy poured over top.

    (7) Next-Night beefy Spanish rice ==========

    1 large green pepper
    1 tsp vegetable oil
    3 cups Smartly seasoned Beef
    1/2 cup water
    28-oz can diced tomatoes,including juice
    1 tsp paprika or Italian seasoning
    1/4 tsp salt
    1 cup uncooked long-grain rice.

    ====== Seed and chop green pepper.Heat oil in a large saucepan set over medium-high heat. Crumble in meat mixture. Stir occasionally until browned and separated intko small pieces, about 5 to 6 minutes.
    ======Pour in water and tomatoes, including juice. Stir in paprika , salt and green pepper. Bring to a boil, stir in rice, cover and reduce heat to low. Simmer 20 to 25 minutes (Do not lift the cover to the pot till time is up)
    ====== Tip: If you have not made the Smartly Seasoned Beef, you may substitute 1 pound ground lean beef mixed with 1 chopped onion, 1 minced garlic clove, 2 tsp. dried parsley, 3/4 tsp Worcestershire sauce, dash of Tabasco and pinches of salt and pepper.

    (8) BONUS======== Cheesy Mashed Potaoes ( Can make to go with meat loaf)

    2 lbs potatoes, about 6 to 8 medium
    1 tbsp butter, at room temperature
    1/2 cup light or regular sour cream
    1 tsp salt
    1/4 tsp freshly ground black pepper (optional)
    1 cup grated chedder cheese

    ===== As soon as meat loaf has been placed in oven, peel potatoes and cut in half. Place in a large saucepan and cover with water. Cover saucepan and bring to a boil over high heat. Then , reduce heat to medium and boil gently, partially covered, until potatoes are tender, from 20 to 30 minutes.
    ====== Drain potatoes and mash, preferably with a potatoe masher ( I whip mine up with an electic beater). Stir in butter, sour cream, salt and pepper. Stir in cheese just until mixed. Pile into a heated serving dish. Potatoes can be covered and kept warm in oven while meat loaf is baking for up to 30 minutes.
