Three-Way Dinners (Chicken)
From a Magazine Chatelaine 1997
Roast chicken and spicy oven fries
Simply a stir fry
Freezer curried chicken a la king
(1) Roast Chicken and spicy oven fries
Preparation time 15 minutes
Roasting time 1 1/4 hours
Makes 4 servings.
8 pieces bone-in chicken legs or breasts
1/3 cup Italian salad dressing
1/2 to 1 tsp dried herbs such as poultry seasoning, rosemary, Italian seasoning or oregano
4 to 6 large potatoes
2 tbsp vegetable or olive oil
1/2 tsp dried parsley, crumbled
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp paprika
1/4 tsp black pepper
====== Place an oven rack on lowest level and another in centre of oven. Preheat oven to 400. Brush chicken with salad dressing, then sprinkle with 1/2 to 1 tsp dried herbs. Place bone-side up in a single layer in a broiler pan. Cut potatoes lengthwise into thick fries. Place in a large bowl. Drizzle with oil. Sprinkle with parsley, garlic powder, salt, paprika an black pepper. Toss until coated.Place potatoes on a nonstick baking sheet.
====== Place chicken on middle rack and potatoes on lower rack of preheated 400 oven. Roast 30 minutes, then turn chicken and brush with more salad dressing. Stir potatoes. Continue roasting, until golden, from 35 to 45 more minutes. Set aside 4 pieces of chicken for use in Simply a stir-fry and Freezer Curried Chicken a la king. Serve remaining chicken with fries.
(2)=========== SIMPLY A STIR FRY==============
Preparation time : 15 minutes
Cooking time : 10 minutes
Makes : 4 to 6 servings
1/3 cup water
1/4 cup soy or teriyaki sauce
1 tbsp cornstarch
1 tbsp maple syrup or sugar
1 tsp Italian seasoning
1/4 tsp black or cayenne pepper
2 cooked chicken legs or breasts
1 tbsp vegetable oil
2 minced garlic cloves
6 to 8 cups thinly sliced mixed fresh or frozen vegetables such as broccoli, bell peppers, inions, carrots, celery and cauliflower or 2 (500-g) bags frozen stir-fry vegetables.
========= Stir water with soy sauce, cornstarch, syrup, Italian seasoning and pepper. Remove skin and bones from chicken and discard. Cut chicken into bite-size strips.
=========Heat oil in a large frying pan set over medium-high heat. Add garlic and vegetables. Stir-fry 2 minutes. Stir sauce and add to pan. Stir-fry until vegetables are hot but still crsip, from 2 to 3 minutes for fresh or 7 to 8 minutes fro frozen vegetables. Stir in Chicken strips and serve. For a hearty meal, add bowls of hot soup. Steam rice or even faster, boil some angel hair pasta or stir up some couscous.
(3)========Freezer Curried Chicken a la King=======
Preparation time : 15 mintues
Cooking time : 15 minutes
Makes : 4 servings
10 oz cream can of mushroom, celery or chicken soup, (I make my own cream soup) half-fat or regular.
1/4 cup milk or water
1/2 tsp curry powder
1/2 tsp ground cumin
2 pieces roast chicken
1 apple (optional)
2 cups frozen or canned peas or corn, or 300g frozen mixed vegetables
1 banana (optional)
6 cups hot cooked rice, about 3 cups before cooking
======== Place undiluted soup with milk or water, curry powder and cumin in a large saucepan if you are going to heat right away, or in a large bowl if making ahead. Whisk until blended. Remove skin and bones from chicken and discard. Cut chicken into bite size pieces and add to soup mixture. Peel appple and finely chop. Stir into sauce with frozen or drained vegetables. (If making ahead, place mixture in a freezer bag and freeze.)
========Place saucepan over medium heat. Cover and stir often until piping hot, from 10 to 15 minutes. To reheat frozen sauce, remove from freezer bag and place block of sauce in a saucepan over low heat. Cover and heat, stirring occasionally, until thawed and hot, about 25 minutes. Stir in sliced banana and spoon over hot rice.
