    Question frugal cookie recipes

    Does any one have any frugal cookies recipes for Christmas they would like to share with me?

    SALTINE TOFFEE BAR COOKIES

    (I got this from cookierecipe.com!)

    Makes 1 cookie sheet, you can break it into small or large pieces.

    1 sleeve (from a 1 lb. box) saltines
    1 cup butter
    1 cup packed brown sugar
    1 12-oz. package chocolate chips (I used Ghirardelli double chocolate)
    chopped nuts, optional

    Preheat oven to 400 degrees.

    Line a cookie sheet (the kind with sides) with a single layer of saltine crackers.

    In a saucepan, combine butter & sugar, over high heat, stirring constantly. Bring to a boil and boil for 3 minutes (keep stirring!). Immediately pour over saltines and spread quickly to cover crackers.

    Bake for about 5 minutes. Remove from oven and cover evenly with chocolate chips. Let sit for 5 minutes and spread chocolate; sprinkle on nuts if using. Let cool completely (we put it in the fridge for an hour to cool it faster), then break into pieces. Keep covered tightly!

    Title: BANANA BARS
    Categories: Cookies
    Yield: 78 servings

    1 1/2 c All-purpose flour
    1/2 c Whole wheat flour
    2 ts Baking powder
    1/2 ts Salt
    3/4 c Butter, softened
    2/3 c Granulated sugar
    2/3 c Firmly packed light brown
    -sugar
    1 ts Vanilla extract
    2 md Bananas, mashed
    1 Egg
    1 pk NESTLE Toll House semi-sweet
    -chocolate mini morsels
    -(12 oz)
    Confectioners' sugar

    Preheat oven to 350'F. In small bowl, combine flours, baking powder and
    salt; set aside.

    In large mixer bowl, beat butter, granulated sugar, brown sugar and vanilla
    extract until creamy. Beat in bananas and egg. Gradually beat in flour
    mixture. Stir in Nestle Toll House semi-sweet chocolate mini morsels.
    Spread into greased 15 1/2x10 1/2" baking pan.

    Bake 25-30 minutes. Cool completely. Sprinkle with confectioners' sugar.
    Cut into 2x1" bars.

    Makes about 6 1/2 dozen bars.

    VARIATION: Omit whole wheat flour. Increase all-purpose flour to 2 cups.

    Choco-Peanut Butter Squares

    Recipe By : Better Homes & Gardens Magazine
    Serving Size : 12 Preparation Time :0:45

    Amount Measure Ingredient -- Preparation Method
    -------- ------------ --------------------------------
    2 1/4 cups flour
    2 cups brown sugar
    1 teaspoon baking powder
    1/2 teaspoon baking soda
    1 cup peanut butter
    1/2 cup butter -- softened
    1 cup milk
    1 teaspoon vanilla
    6 ounces semisweet chocolate chips

    In large mixer bowl stir together flour, brown sugar, baking powder, and
    soda. Add peanut butter and butter; blend at low speed of electric
    mixer until crumbly. Remove 1 cup of the crumb mixture; set side. To
    remaining crumbs in bowl, add the milk, eggs, and vanilla. Blend at low
    speed till moistened; beat 3 minutes at medium speed. Pour batter into
    an ungreased 13 x 9 baking pan. Sprinkle the chocolate pieces over
    batter; sprinkle reserved crumbs atop. Bake in a 350 degree oven for 40
    to 45 minutes or till cake tests done. Cool; cut in squares to serve.

    Title: Chocolate Caramel Swirl Bars
    Categories: Cookies, Chocolate
    Yield: 1 servings

    2/3 c Crisco shortening
    1 1/2 c Firmly packed brown sugar
    2 tb Water; divided
    1 ts Vanilla
    2 Eggs
    1 1/2 c All-purpose flour
    1/3 c Unsweetened baking cocoa
    1/2 ts Salt
    1/4 ts Baking soda
    14 oz Caramels; unwrapped
    1 c Semi-sweet chocolate chips

    1. Preheat oven to 350F (180C). Grease a 13 x 9-inch (33
    x 23 cm) pan with shortening.
    2. Combine shortening, brown sugar, one tablespoon water
    and vanilla in large bowl. Beat at medium speed of electric
    mixer until well blended. Beat eggs into creamed mixture.
    3. Combine flour, cocoa, salt and baking soda. Mix into
    creamed mixture at low speed until just blended.
    4. Place caramels and remaining 1 tbsp (15 mL) water in
    microwave-safe bowl. Microwave at 100% (HIGH power) for 2
    minutes. Stir. Microwave an additional minute if caramels
    are not melted. Or place in small saucepan over low heat.
    Stir often until melted.
    5. Spread half of chocolate mixture in greased pan.
    Distribute melted caramel evenly over chocolate mixture.
    Sprinkle chocolate chips over caramel. Spread remaining
    chocolate mixture over caramel and chocolate chips.
    6. Bake at 350F (180C) for 25 to 30 minutes, or until
    centre is set. Cool in pan on cooling rack. Cut into bars.
    Makes: 3 dozen bars

    Fruit Cocktail Bars

    Amount Measure Ingredient -- Preparation Method

    1 1/2 cups sugar
    2 eggs
    1 can fruit cocktail -- (17 oz) undraine d
    1 teaspoon vanilla extract
    2 1/4 cups flour
    1 1/2 teaspoons baking soda
    1 teaspoon salt
    1 1/3 cups coconut
    1 cup walnuts -- chopped
    ----glaze----
    1/2 cup sugar
    1/4 cup butter
    2 tablespoons milk
    1/4 teaspoon vanilla extract

    n bowl cream together sugar and eggs. Add fruit cocktail and vanilla; mix
    well. Add the flour, baking soda, and salt to the creamed mixture and mix
    well. Pour into greased jellyroll pan. Sprinkle with coconut and walnuts.
    Bake at 350 degrees for 20-25 minutes or until it tests done with a
    toothpick. Cool for10 minutes.

    Meanwhile, in a saucepan, bring sugar, butter (or margarine), and milk to a
    boil. Remove from heat; add vanilla and mix well. Drizzle over warm cake.
    Cool. Cut into bars.

    Note: Instead of the glaze mentioned here, you can also make a simple glaze
    of powdered sugar, milk, and lemon juice for the topping. It's good either
    way.

    Title: Molasses-Ginger Bars

    1/2 c Butter Or Margarine;Softened
    1/2 c Brown Sugar; Packed
    1/2 c Molasses
    1 ea Egg; Large
    1 1/2 c Flour; Unbleached
    1 1/2 t Baking Powder
    1 t Ginger; Ground
    1/2 t Salt
    1/4 t Baking Soda
    1/3 c ;Water
    1/2 c Raisins
    ----------------------------------TOPPING----------------------------------
    1 x Powdered Sugar

    In a mixing bowl, cream together the softened butter or margarine and
    brown sugar till mixture is light and fluffy. Add molasses and egg; beat
    well. Thoroughly blend flour, baking powder, ginger, salt and baking
    soda. Add dry ingredients to creamed mixture alternately with water; mix
    well. Stir in raisins. Pour mixture into greased 13 X 9 X 2-inch baking
    pan. Bake at 350 degrees for 20 to 25 minutes. Cool thoroughly; sift
    powdered sugar on the top and cut into bars.

    Makes 36 bars.

    Spiced Carrot Chews
    Makes about 6 dozen 2-1/2" cookies

    1 c. margarine
    1 c. firmly packed light brown sugar

    1 egg
    1 tsp. vanilla

    1-1/4 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. ground cinnamon
    1/4 tsp. ground nutmeg
    1/4 tsp. ground cloves
    2 c. rolled oats
    2 c. shredded carrots
    3/4 c. chopped nuts
    1/2 to 1 c. raisins

    Preheat oven to 350 degrees Fahrenheit.

    In large mixer bowl, blend until fluffy margarine and brown sugar.
    Add egg and vanilla and blend.

    Add and combine just until mixed the flour, baking powder, cinnamon,
    nutmeg, cloves, oats, carrots, nuts and raisins.

    Drop rounded tablespoons of the mixture on greased baking sheets
    and bake for 13-15 minutes. Cool for 5 minutes on the baking sheet
    and then transfer to a wire rack to cool completely.

    These are my all time favorite cookie recipes. I use homemade Bisquick so it is very frugal. Unless you add some expensive nuts or something. I have put these in jars and people love them but if I bake them for our family I double the recipe.


    COOKIES IN A JAR (10 recipes)
    This was in my newspaper & I haven't tried them but I know they are always fun to receive. Layer ingredients as listed in a quart jar, attach directions shown below.


    CRUNCHY TOFFEE COOKIES

    2/3 cup toffee chips
    1/2 cup chopped pecans, toasted and cooled completely
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    CHOCOLATE LOVER'S COOKIES

    1/3 cup milk chocolate chips
    1/3 cup white chocolate or vanilla milk chips
    1/3 cup semisweet chocolate chips
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    HUSTLE-BUSTLE BUTTERSCOTCH-OATMEAL COOKIES

    1/2 cup butterscotch chips
    1/2 cup packed dark brown sugar
    1 cup old-fashioned oats
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    OUTRAGEOUS OATMEAL-RAISIN COOKIES

    1/3 cup raisins
    1/3 cup chopped walnuts, toasted and cooled completely
    1/2 cup packed dark brown sugar
    1 cup old-fashioned oats
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    WONDERFUL WHITE CHOCOLATE-MACADAMIA NUT COOKIES

    1/2 cup chopped macadamia nuts
    1/2 cup white chocolate or vanilla milk chips
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    CHUNKY CHOCOLATE COOKIES

    1 cup chocolate chunks
    1/2 cup packed dark brown sugar
    1 cup biscuit and baking mix
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix

    HOLIDAY HAZELNUT COOKIES

    1 cup chopped hazelnuts, toasted and cooled completely
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    CRAZY FOR CRAISINS COOKIES

    2/3 cup sweetened dried cranberries (Craisins)
    1/2 cup chopped pecans, toasted and cooled completely
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    CHOCOLATE-COVERED RAISIN COOKIES

    1/2 cup old-fashioned oats
    2/3 cup chocolate-covered raisins
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    CHEWY COCONUT-ALMOND COOKIES

    1 cup shredded coconut
    1/2 cup sliced almonds, toasted and cooled completely
    1/2 cup packed dark brown sugar
    1 cup buttermilk biscuit and baking mix
    1/2 cup packed light brown sugar
    1 cup buttermilk biscuit and baking mix

    Instructions for layering ingredients:

    In 1-quart wide-mouth glass jar, gently layer and pack ingredients in the order listed. If there is any space left after adding the last ingredient, add more baking chips, dried fruits or nuts to fill the jar

    Place lid on top. Cut an 8-inch circle of fabric to cover lid. Place fabric over lid; secure in place with a rubber band, then ribbon or raffia. Decorate as desired.

    Note: When measuring brown sugar, crumble it between your fingers for uniform texture. Be sure to pack the brown sugar firmly in the jar to prevent the baking mix from sifting down through it.

    Make a gift card to attach as follows: "Empty contents of jar into medium bowl. Stir in 1 stick of butter or margarine, melted; 1 egg, and 1 teaspoon vanilla until well combined. Shape into 1-inch balls. Place on baking sheets coated with cooking spray. Bake at 375 degrees for 10 to 12 minutes or until cookies are light golden brown.
    Makes 2-1/2 dozen cookies

    Substitute almond extract for vanilla in cookies containing almonds.

    "To make cookies as bars: Empty contents of jar into medium bowl. Stir in 1 stick of butter or margarine, melted; 1 large egg, and 1 teaspoon vanilla until well combined. Press into an 8x8-inch baking pan coated with cooking spray. Bake at 350 degrees for 20 to 24 minutes or until bars are light golden brown and center is almost set

    Makes 16 bar cookies."

    I don't know if these count as cookies or not, but we make a lot of quick breads this time of year and get sick of them before we've finished the whole loaf. I cut what's leftover into 1" slices and then into 1" sticks and bake them in a low-degree oven until hardened like biscotti-YUM!

    These used to be frugal...but with the price of peanut butter & sugar rising here, I'm not sure they really are all that inexpensive anymore. But they are super easy!

    1 cup peanut butter
    1 cup sugar
    1 egg

    Mix all together, roll into balls. Put on cookie sheet and back at 350 for 12 minutes!

    My hubby won't let me make any other peanut butter cookie after I made these. They are crumbly and taste really good!
