Use the meatloaf in spaghetti sauce or cut it up very fine and make (sort of) sloppy joes out of it.
The extra oatmeal could be used as a thickener in soups.

You can make white bread or just bread and add the oatmeal in with the flour.
Or maybe use it for glue??

I make too much oatmeal porridge on purpose and put serving sizes in those cheap little ziploc Tupperware containers. I nuke em for fast breakfasts.
As for meatloaf, I pat my meatloaf mixture out on cookie sheets and cut the mix into square meatballs and bake them in sheets.
So it's the same as meatloaf cut in cubes, which I have done with leftover meatloaf.
But I also slice meatloaf thin for the nices sandwiches. Which freeze well btw if you use well buttered bread, and a little Miracle Whip (which will freeze, but mayo won't) and a little mustard on it.

I don't know about oatmeal. But if you have freezer space you can always freeze leftover meatloaf. That's what I usually do if we get tired of it before it's gone. Back in the days when I could still eat bread I enjoyed a nice meatloaf sandwich.

I've put leftover meatloaf on pizza and spaghetti sauce for pasta like someone mentioned above. Also can slice it, put sauce and mozz. cheese atop and heat until meat is hot and cheese bubbly, walla~ meatloaf parmesan.
Here are a few more ideas.

I microwave my leftover oatmeal with a little milk and brown sugar. It winds up lumpier than the original, of course, but who really cares? I cook up a pot of steel cut oats, wheat berries, millet, and some raisins on the weekend and eat it reheated for breakfast all week. Brown sugar rather than white is ESSENTIAL for good oatmeal, lol.
BTW, I make my own brown sugar, too. 2 Tbsp molasses mixed into one cup of white sugar and voila! You have nice fresh brown sugar any time you want. No more dried out lumps thrown in the trash.

Or use the oatmeal in muffins for some of the flour & use less liquid....or pancakes..or brownies..or cookies.
