    Leftover soup the EASY way.

It used to be a staple around here, I don't know why I quit. Oh yeah, I remember it was the low carb diet last year.

    OK

chop whatever leftover meat you have, and any drippings or gravy and add into the soup with the packet of flavouring

along with any chopped up leftover veggies

raw or cooked onions go well, a drop of sesame oil (dark kind found by soy sauce) brings out a really authentic flavour

and frozen peas, a handful if you don't have any l/o veggies.

If you have green onions in the crisper throw a few of the green tops on at the end as a garnish, but chop them up so they make little green rings.

That is how we like it.

Other fun stuff, a bit of ginger powder or grated raw ginger
a dash of oyster sauce if you have it on hand
red pepper flakes or a hit of tabasco if you like hot flavours.

even a little chopped lettuce, which wilts into the soup in a very authentic chinese style of soup.

No meat? scramble an egg, fry it gently and cut it into ribbons and add it.

Try adding green beans (french style). So yummy in the chicken flavor ramen noodles. Only add enough to keep the noodles moist. Ramen noddles aren't on my extended familys grocery lists, so needless to say they always request this for family get togethers.

There is a book called 101 things to make with ramen noodles. I can't remember the exact title.

I'll have to think more and see if I can find my book with the recipes.

    This is what I do:

Cook and drain 2 pkgs. noodles. Heat a tablsp. of margarine or oil in pan. Add noodles, thawed frozen peas or green beans (1 cup or so), seasoning packet (I only use one because it's salty enough with just 1, saving the other one to season cooked rice), dash of soy sauce. Heat through. Beat 2 eggs and pour over noodles and all. Stir and cook till eggs are done. Serve.

But the other day I found this recipe. Sure sounds good but I have not tried it yet. I personally was kind of confused on the cooking instructions for the noodles, but was going to try eventually as written. If anyone tries it, please let us all know your opinions.

ORIENTAL MANDARIN ORANGE AND NOODLE SALAD
    Chicken flavored Ramen Noodles
    1/4 cup oil
    1/4 cup sugar
    3 Tbsp. vinegar
    Leaf or romaine lettuce
    Almongs (slivered)
Red Onion (optional) you choose how much you like
    1 can mandarin oranges, drained
Dressing: Mix oil, sugar, flavor packet from noodles and vinegar all together and set aside.
Noodles and almonds: Bake in oven at 350ºF until done about 10 minutes. DO NOT OVERBAKE. Mix lettuce, oranges, almonds and dressing, toss noodles into salad just before serving.

You know how fried rice has eggs & carrots in it.......

In college Joe and I would cook the noodles add a can sliced of carrots (drained) and add a few eggs to it. Sometime we would put other veggies in it like corn, but we almost alway's would add the carrots to it.
