ISO TNT chicken and wild rice soup recipe, esp if you have one for the crockpot.
We attended a feed-the-hungry fundraiser a few weeks ago -- local restaurants had provided soup and bread.
The long story: We were pressed for time, and each member of our family had one bowl of soup, then we dashed off to meet with a repairman. It was a terrible crowd, and we had to eat outdoors. DD#1 (who has NO body fat!) was shivering.
So, we did the gobble-and-go.
However, my picky eater, DD#2, had eaten a Chicken and Wild Rice soup. She really, really liked it. It was such a rush and such a crush, that I'm not even sure which restaurant had provided that soup.
Anyway, I now have diced chicken. I bought wild rice yesterday. I just need a wonderful recipe. And, since I'm a prep-things-then-forget-them cook, a crockpot recipe would be ideal.
Any help?

I have an excellent wild rice recipe...It is a stove top recipe, but I have cooked it in the crockpot many times too...and its even better the next day.
Wild Rice Soup
1.5 cups water
3/4 cup Wild rice
Put the wild rice in a small pot with the water, bring to boil lower heat cover and simmer for 35 - 40 minutes....DO NOT DRAIN set aside (sometimes I make the night before)
In seperate larger pot
Melt 1/4 cup margarine/butter
1/2 cup chopped onion
3 cloves garlic
Saute onion and garlic in melted butter then make roux by
Stirring in 1/2 cup of flour, cook one minute stirring constantly.
Gradually add 4 cups of chicken broth
Add: 1.5 cups potatoes - 2 medium
1/2 cup chopped carrots
1/2 tsp thyme
1/2 t nutmeg
1/8 tsp pepper
1 bay leaf
Bring to boil and reduce heat. Cover and Simmer 15 - 30 minutes
Add one can corn ~ undrained
Cover and simmer additional 15 - 20 minutes
Stir in
2 cups 1/2 and 1/2
Wild Rice with liquid (may have all absorbed)
Add about 2 cups chopped chicken.
Do Not Boil, just heat.
I have also used ham or sausage in place of the chicken, or no meat.
I also have added slivered almonds to top each bowl when serving.
To make in the Crockpot
I basically put in the chicken broth, veggies and spices and cook all day to soften the veggies.
About an hour or so before eating I make the roux on the stove, then stir into the soup base in crockpot. After thickened, add chicken, wild rice and milk...heat and eat...
This soup is very good. When I make a hugh batch of Christmas Eve, I basically make the Wild Rice, then the Soup Base a day or 2 before...and assemble before the meal.
I have also put the soup base, wild rice (combined) in gallon baggies and put in freezer, when thawed, just add the milk heat and eat!

I hope you like it as much as we do!
Not sure if you ever cooked Wild Rice before...but you can buy it washed or unwashed...if you have unwashed you want to rinse it a couple of times before cooking.
Also, wild rice does not smell very good when cooking, at least we don't care for the smell....but it does taste great! Just wanted you to know, not to expect a wonderful aroma from cooking wild rice...The soup smells good, just not when you are cooking just the wild rice.
