cheap biscuit beef rolls
I've made this many times, very cheap to make, cheese is optional if u have it on hand.
1 lb ground beef 1/4 tsp pepper
1 med. onion, chopped 1 tbsp worcestershire sauce
1 cup chopped mushrooms 2 cups tea biscuit mix or normal batch of
biscuit dough from scratch
1/4 cup beef stock or water 1/2 cup grated cheese
salt
Brown ground beef, add onions. cook until tender. Drain fat. Add mushrooms, cook for 2 minutes. Add beef stock and seasonings. Simmer, uncovered, until liquid evaporates.Allow mixture to cool for rolled biscuits. Roll out dough to rectangle, 1/4 in thick. Place dough on greased baking tray. Spread meat with grated cheese.
Roll up as jelly roll. Moisten edges with water. Press to seal. Bake at 400 F for 15 minutes. Reduce heat to 350 F and bake for another 15 minutes. Serve hot. Makes 4 to 6 servings.
