Fried Green Tomatoes
green tomatoes, sliced med.
2 eggs, beaten
flour
salt
pepper
Dip tomato slices into eggs, coating both sides and then into flour, again coating both sides. Fry in skillet with about 1/4 inch of oil until golden brown, turn and fry other side until golden brown. Season as desired. Drain on paper towels.
I like to add corn meal to the flour/about 2 parts meal to 1 part flour. These are so good. If you grow your own tomatoes, quite ecomonical.

Yum! I always make a batch or two of these in tomato season. I'm looking forward to them again this year!
