looking for recipe using shredded pork
I cooked a really big pork roast in the crockpot last night and shredded it. I usually just make bbq sandwiches or enchilidas with it, but am looking for something new to try. Any recipe ideas? Thanks

Stir fry, fried rice, curry, or bbq pork (in sauce on buns)

This recipe just happened to be on Emeril Live on the Food Network Channel yesterday. I have not tried it but it looked wonderful. Just a thought....
BBQ CORNBREAD
1 1/2 cups butter, melted (+ 1 T for greasing pan)
1/4 cup plus 2 tablespoons milk
1 1/2 cups white sugar
6 eggs
1 1/2 (15-ounce) cans cream-style corn
1/4 cup drained canned chopped green chile peppers
3/4 pound left over BBQ pork or beef
1 1/2 cups shredded cheese (Recommended: combination Monterey Jack and Cheddar)
1 1/2 cups all-purpose flour
1 1/2 cups yellow cornmeal
2 tablespoons baking powder
Pinch salt
Preheat oven to 325ºF. Lightly butter a deep 9 by 13-inch baking dish. Shred left over BBQ into fine pieces and set aside.
In a large bowl, stir together the butter, milk, and sugar. Beat in the eggs, 1 at a time, until well incorporated. Add the creamed corn, chiles, cheese, and shredded BBQ and stir until well incorporated.
In a separate bowl, stir together flour, cornmeal, baking powder, and salt. Add flour mixture to corn/BBQ mixture; stir until smooth. Pour batter into prepared pan.
Bake in preheated oven for 1 hour, 10 minutes, or until golden brown and until a toothpick inserted into center of the pan comes out clean.
Topping:
6 tablespoons butter
3 tablespoons your favorite BBQ sauce
1 1/2 tablespoons cayenne pepper
1 1/2 tablespoons garlic powder
Combine all and melt in microwave. Brush over cornbread and place back in oven for a few minutes. Cut into squares and serve warm. It's ok to break up pieces and serve in a small bowl.

I like to add shredded pork to chili rather than ground beef

I made carnitas with them. I improvised a bit, but I love them from On the Border
Bacon grease (for seasonings)
1/3 to 1/2 an onion diced
chopped garlic, 2 teas, (approx) I love the kind from the jar
Turn on the grease, and saute the onion and garlic till tender. Add the pork and mix it around a bit. I added some rosemary, some oregano, some garlic salt, paprika, pepper, salt, to taste, and cooked till the pork got a bit crispy.
I ate this plain, also ate it in flour tortillas. You could add cheese, make it into fajitas......

I make pot roast. Just boil potatoes and carrots on the stove top. Add to your shredded pork and add some brown gravy (I use the mix). You can also add some cooked onion. Salt and pepper. Yummy! One of my husband's favorites!
