    Default Leftover Potato Salad Uses

    Received this in an email today:

    If you love to cook, you are going to like this! It's my idea, but who knows, maybe others have done this too, but for some reason, I don't think so.

    It's getting to be potato salad time!! Yeah! The darn part about potato salad is you can't keep it very long (it starts separating after two days), and if you have some leftover after the potluck or the picnic you can't freeze it either. You know mayonnaise won't freeze and you can just imagine what thawed out potato salad would look and taste like. (The look on your face right now after just reading about it tells the truth.)

    Well I am here to tell you, "You can freeze your leftover potato salad!" I did it last summer when this idea came to me. When I finished the second half of my experiment I was so excited with the result! Here is the recipe.

    Thaw approximately three cups of leftover, frozen potato salad. Puree in a food processor two thirds and save out one third.

    Put puree and un-pureed mixture into a saucepan and add two cups of milk or half and half, two tablespoons of cornstarch and two 6 1/2 oz. cans of minced clams and the liquid. Cook until liquid thickens and serve the most delicious clam chowder! I told you you'd like this!

    I like pickles in my potato salad...and something about pickles in clam chowder just doesn't seem right!

    If you have leftovers you can't use up, you're making too much. Cut your recipe back some to avoid having waste.

    There's vinegar and mayo in my potato salad, while it might freeze well, I don't think I want it in chowder. Not that we ever have leftovers.

    I've seen a recipe that made the potato salad into patties or balls, rolled in bread crumbs and pan fried. Looked tasty, but I've never had leftover potato salad to try it out.
