Healthy & Frugal - Whole GRAINS, even!
I want to start a thread that is dedicated to eating healthy. I realize it is not always as cheap but SOOO much better for you!
Recipe (LOW CARB)
Cabbage & Beef
SERVES 4-6 depending on your eaters
1 beef bullion cube (if you have chicken use that) (.02)
1/4 cup HOT water (free)
1.5 llbs ground lean beef (2.50)
1 T Jalapenos (pennies)
1 onion (.10 from farmers market)
1 can (4.5 oz) green chilies (.39 store brand)
2 cloves garlc or 1-2 t garlic powder (pennies)
1 head cabbage (1.00 farmers market)
Salt and pepper
1 organic tomato (.25 at farmers market)
1/2-1 cup parmesan or medium reduced fat cheddar (1.50)
Whole wheat buns (optional) (1.50)
TOTAL - APPROX $6.50 IN CALIFORNIA (its expensive here!)
Preheat oven to 350 degrees. Take hot water and throw in the bullion cube so it dissolves. Set aside.
Chop onion finely and brown with ground beef and garlic. Drain meat and put in jalapenos and chilies and stir with meat (if using garlic powder add now). Set aside meat mixture. Slice cabbage into inch thick slices. Take LARGE cassarole (9x12) and spray pam and layer 1/2 cabbage then pour meat mixture over and then layer rest of cabbage. Pour dissvoled bullion cube and water over cabbage. Tent with foil and bake for 45 minutes. Take out and cut tomatoes THINLY and put over top and sprinkle with cheese put back in oven UNCOVERED and melt cheese (15 min) Pile on wheat buns if you want ... its good with just mustard though! Tastes like beerocks from the fair!
Serve with rolls and MUSTARD! YUMMIE

FOR GUESTS Mediteranean Flank Steak & Greek salad <$12
Flank Steak FOR COMPANY
3-4 llbs Flank steak or CHEAP BBQ steak (3.00 on sale)
Marinade
4 T Balsamic vinagar (.25)
1 LARGE red onion (.25 from farmers market)
3 T Olive oil (.50)
2-4 cloves garlic (.50)
Splash of red wine (optional .25 trader joes two buck chuck)
2t oregano (dried)
Slice onion in thin slices and reserve half onions for salad (later) Mix garlic, balsamic, oregano and garlic together in a freezer bag throw steaks in the bag.. (i usually hit it with a splash of red wine (YUM) Throw in onions. Marinate before work or overnight (the longer the better)
Slap it on the grill until done to your liking.
Total 4.75
MEDITERRANIAN SALAD
2 bags Mediterranean salad mix from the store (3.00)
Reserved onion (0)
Tomatoes (.25 from farmers market)
1/2 container Feta Cheese (sundried and tomato is best) (1.50)
black olives (.29 for little can)
Italian or store brand balsamic dressing (1.25 on sale)
Total $5.75
An additional side with is always good is rice pilaf (i use brown rice and wheat pasta)
1/2 stick butter (.25)
2 cups rice (.25)
broken spechetti from bottem of bag (free)
2 chicken bullion cubes (.10)
2 cups water (free)
Garlic powder (pennies)
Preheat oven 350 degrees. Take skillet melt butter on medium heat break up spaghetti andstart browning measure rice and throw in and brown all util golden brown. Take a 2-4 quart baking dish (depends if you want to double this) pour rice in baking dish, pour water over rice sprinkle with garlic powder and salt and pepper to taste throw in chicken bullion and put in over covered for 1-1.5 hours... Come out fab with no work walk away and do soemthing else!
Serve meal with bread if you want for an additional 1.00!
TOTAL COMPANY DINNER - $11.50 plus you have leftovers!
LEFTOVER DINNER from this
GREEK WRAPS
Slice meat in think slices and layer on Tortillas (.75). layr on leftover salad and throw some more feta on. Top with leftover dressing YUM
Leftover .75
Serve rice on the side or throw it on the wrap!
