Need Some Ideas
Since my husband is a fisherman, we make our money in chunks dispersed unevenly throughout the year. Right now he is gone and will get back the 3rd week of July. He wasn't able to leave us with much money, basically just enough to pay the bills. I pretty much cook from scratch and have a fairly good supply of basics. I belong to a produce co-op and just got a bunch of avocados. I do have some sour cream and would love to make guacomoli (sp?), but we have no crackers or chips. Can anyone tell me how to make tortillas and then chips? I have corn I can grind, and lots of wheat flour, but not much oil, (oh, I do have olive oil). I have tried to make tortillas several years back and remember problems with them being too thick and really funny shaped and just ok tasting. Anyone an expert? I know that I could dig into our savings, but we aren't going to starve, so there really is no emergency. The other challenge I am finding is that with DH gone and the kids little, we are more reliant on snacks. I have 25 lbs of popcorn, but it's getting old. We have some fruit, but I have to limit it, or it'll all be gone. One disadvantage of scratch cooking is that you can look in the cupboards and find nothing that is quick to eat. Any snack ideas?

can you make muffins or quick breads of some sort?
Cinnamon toast?
homemade crackers with your avacado dip?

If u have tortillas buy in bulk when onsale, I make chips out of them. butter them and put garlic powder on them , cut them in slices and put in oven at 400 F till crisp and light brown.
Caramel popcorn to use some of it up before it goes bad or cheddar melted on it with fake bacon bits.
carrot sticks, tunips sticks, and dip
biscuits ( use same dough to make cinnmaon rolls and jam cookies-to put thumb print in middle and put tbsp of jam in it before baking.

My kids love celery with peanut butter in them, you can even sprinkle them with raisins. Quick and healthy!

Do you have any recipe to make some kind of flatbread -- guacamole is good with that too, not just crunchy stuff.
Avocados are also yummy sliced on sandwiches -- We make shredded chicken sandwiches with mexican seasonings and sliced guacamole.

guacamole is also good with veggie sticks- i use carrots, but i bet other stuff would be good too.... i havent yet mastered tortillas, but i keep trying, lol

My father was a commercial fisherman - out 10 days home 5 days - when I was growing up.
Try making a big batch of cookie dough and freezing it in sections. Then you can thaw and bake at will. Use cookie cutters with the kids and they'll enjoy being part of it.

Same thing with cake. Make a big cake and freeze some, so it doesn't seem like we're having cake every day. Brownies too.
Cream cheese on graham crackers.
Yogurt parfait - yogurt layered with granola and fruit.
Pudding.
Make your own pretzels and potato chips - it's also an activity for the kids.
