4 meals out of 1 roast
Hello everyone
This is my first post on this site. I've spent quite some time going through the various forums, often with tears in my eyes. Some of the stories members have to share are completely inspiring and make me feel very humble.
I thought I could contribute in a small way by sharing one way of making a meal last for 4 different dinners. I know there is a lot of recipes on using lentils and vegetables (and I love both) but for some of us we still enjoy meat when we can afford it.
I try to buy a really large roast, either pork or lamb, about once a month. I have a family of 2 small boys and one much larger one (hubby) and I find for a family of four, I can make one roast last for four different meals.
Dinner 1 - your usual roast dinner, heavy emphasis on the vegetables rather than the meat
Dinner 2 - I slice off part of the remaining roast into fine slivers and marinate it in a mix of soy, honey, garlic, sherry (if its available), Chinese Five Spice, ginger (grated) and let it sit for an hour or two. Then I throw it into the wok with carrots, green vegs or whatever is in season and serve with boiled rice or noodles.
Dinner 3 - Rissoles (or hamburgers). Slice off all the remaining meat off the bone. Put 3-4 slices of stale bread in your blender and make breadcrumbs. Remove and put aside. Then put the last of the meat in the blender and process until it is mince-like in texture. Combine with breadcrumbs, an egg, a little ketchup, a tin of brown lentils or beans, canned corn, any herbs you might have to spare and fry up. Serve with veg or salad
Dinner 4 - Put the bone in a large pot of water together with a few carrots, celery and cook for 1 hour over low heat. Strain and give bone to the dog. Return stock to stove and add 1-2 cups of pearl barley (or any washed and soaked lentil), together with chunks of pumpkin, potato, canned corn kernels, frozen peas, salt and pepper, 1 can of crushed tomatoes and cook for about 40 minutes on simmer. Serve with bread.
