Recipe: Taco Casserole
INGREDIENTS:
1 pound lean ground beef
8 ounces macaroni
1/2 cup chopped onion
1 (10.75 ounce) can condensed tomato soup
1 (14.5 ounce) can diced tomatoes
1 (1.25 ounce) package taco seasoning mix
2 ounces shredded Cheddar cheese
2 ounces shredded Monterey Jack cheese
1 cup crushed tortilla chips
1/2 cup sour cream (optional)
1/4 cup chopped green onions

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
Cook pasta in a large pot of boiling water until al dente. Drain.
In a large skillet, cook and stir ground beef and chopped onion over medium heat until brown. Mix in tomato soup, diced tomatoes, and taco seasoning mix. Stir in pasta.
Spoon beef mixture into a 9x13 inch baking dish. Sprinkle crumbled taco chips and grated cheese on top.
Bake for 30 to 35 minutes, until the cheese is melted. Serve with chopped green onions and sour cream, if desired.

This sounds really good I'll have to wait until it cools down a little I have used my oven 1 time in 3 weeks

Shelly and Dottie, I make something very close to this, and I use the stove top method, well really an electric skillet, but I mean I do it without the oven! I use tomato sauce as opposed to soup and I add a little water to that can and to the diced tomato can and add it to the skillet. A little extra water seems to help it simmer without sticking and the water evaporates away. Then I turn off the heat and sprinkle with cheese like Dottie suggested! It is excellent, and without the cheese and chips it freezes and reheats great. I always make extra to have a quick meal later! Just thaw and heat, add your cheese and chips. Always gets a big yum in our house!

sounds pretty good. I may have to give this a try, but tonight I am figuring out what to make with a giant zucchini and was thinking of trying frugalfarmwife's posted recipe for her giant zucchini.
