    Talking 2nd Day cooking from scratch and its cost

    Okay today was a fresh meal but not really a "scratch" meal.
    I will let you be the judge but it was fast, easy, cheap, HUGE amounts left over(I mean a full lunch for the family!) lunch for dh the next day and dd went back for 3 servings so it must have been a hit.

    MeatBall Stroganoff

    8-10 servings( There really is a lot more!A whole tupperware left)
    8 servings--.98
    10 servings--.78
    Total meal cost--$7.82

    Oil for cooking meatballs..just to coat pan
    2lbs ground beef or even turkey if you like--$4.00--$2.00 if turkey
    1 cup bread crumbs--.29
    salt
    1 cup milk --.50
    2 cans cream of mushroom soup--1.08
    1 16oz.tub sour cream--.98
    1-1lb bag egg noodles--.87
    1 egg--.06
    4 cups frozen green beans or 2 cups frozen 1 can kentucky Wonders--1.08
    I made biscuits from a mix that added about .35 to the meal.

    Cook noodles as usual. Cook the frozen green beans until soft, add 2 tablespoons butter and the Kentucky wonders and cook til hot. Season to taste.
    Mix meat, egg, spices, salt,and bread and make meatballs. Add oil to skillet and cook meatballs. This can be done in the microwave if you wish.

    In a dutch oven place both soups,milk and sour cream and heat until hot and smooth.Add meatballs and cook well until meatballs are hot and cooked through.
    Place noodles in dutch oven and stir mixture up well. Add seasons to taste.
    I made biscuits from a mix.

    All in all this made a TON of food. Much more than 10 servings! This recipe could probably be cut in half. Use turkey and it is only $5.82 a meal.

    My dd had 3 plates and I had 2!

    And for those who gave me advice on my biscuits, although I did use biscuit mix they turned out very nice! The advice you gave me did help tons. maybe I won't get stuck in walmart next time I want biscuits for dinner and I will have time to try scratch biscuit but I have to say I am feeling very "cheery" about these!

    That sounds like another yummy meal. What are Kentucky Wonders? I want to try your recipe soon but I am not sure what those are.

    They are also known as flat Italian green beans.They are a big flat wide bean and they taste wonderful!

    Sounds good. I'm going to start this weekend doing some once-a-week cooking. I work full time, and have a 45min-1hour commute (depending on the traffice), so I think doing once a week cooking on the weekends will work good. I will continue watching your adventures. Good luck and happy cooking!

    Heather,

    Quite a few of the recipes I am going to be trying are casseroles so maybe it will help you to cook for the week all at one time.

    It has been years since I did them in the microwave but I can tell you how I did it. Roll them into balls and place them in a pyrex glass pie pan spaced out a bit. I can't remember how long i cooked them and microwaves have gotten stronger so I would say zap them for a minute, look at them and maybe turn them over and do it again. Surely no more than 2 minutes wouldn't you think??You might cut one in half on the first batch and see how they are so you will know next time.
