    Default 6th day cooking and costs

    Cheesy Chicken Casserole

    3 bonless skinless chicken breasts(or any cooked chicken)--$4.18
    16 oz(or so I poured it out of a 32 oz bag) broccoli--.87
    1 cup milk--.25
    1-8oz package of cream cheese--$1.07
    salt
    1 and 1/2 cups fresh mozzerella cheese grated--.96

    total meal cost--$7.33
    6 ser--$1.22
    8 ser--$ .91

    Boil and slice chicken and set aside. In a microwavable bowl add milk,salt and cream cheese. Microwave about 5 minutes stirring after every minte.Remove from Microwave and add 1 cup of the mozzerella cheese to milk mixture.

    Cook broccoli and pour into a greased 2qt casserole. Add chicken and milk mixture. Stir well. Sprinkle remaining mozzerella cheese on top and bake at 350º for about 15 minutes until hot and bubbly.

    Let sit 5 minutes.

    Not alot left over. Not much left for lunch for dh tomorrow. It tastes very good. We had it with french bread.

    Well tonight was my first attempt at a real frugal dinner. In my crockpot I put three boneless, skinless chicken breasts, 3 cups of water, 2 chicken bullion cubes, a few dashes of pepper, a few dashes of onion powder, and a few dashes of Italian seasoning, finally I added a heaping teaspoon of heart healthy butter. I turned it on at about 7:45am, and I had my husband stir it a little when he went to work around noon. I had to go grocery shopping this afternoon. I have a great crockpot that you set for the number of hours you want it to cook, and then it goes on a keep warm setting. When I finally got to eat supper at 7, the chicken was so juicy and tender that it was falling apart. I had a small can of spinach and two slices of loaf bread. Had a bottle of Sam's Choice water, and that was my supper. Going to take the second piece for lunch tomorrow. My dh will get the third piece. I'm saving the leftover juice for another day. I've got 3 chicken breasts left, and tomorrow I think I'm going to try some BBQ sauce on it. This was some chicken I had gotten a long time ago, and it had been just sitting in my freezer.
