    Default ISO chicken recipe

    I am looking for a frugal chicken soup recipe. I have several chicken breasts and now that the weather is getting cool, soup is sounding pretty good.

    I would love to have a chicken/lime or chicken/lemon recipe (preferably lemon because I already have several). I would like something really flavorful, and I have a ton of dried spices. It would be best if it could be made in the crockpot.

    Rats!!! All of my cookbooks are packed up right now until we are able to move into the new house. Hold on and I will give you a great crockpot recipe site that I refer to often. Be right back!

    I have a wonderful Chicken and Lime Tortilla Soup Recipe from the
    "Rotisserie Chickens to the Rescue!" cookbook.

    Soup
    2 T. oil
    1 sm. onion, chopped
    15 baby carrots, cut crosswise into thirds
    2 tsp. minced garlic
    1 tsp cumin
    1tsp chili powder
    1 medium zucchini, cut into pieces
    3 cans fat-free chicken broth
    1 can diced tomatoes
    1 can corn (or frozen)
    2 T. canned mild diced chilies
    1/2 tsp salt
    2 c. diced chicken
    (I add about 1/2 c. salsa for extra zip)

    Serve over sliced avacado, cilantro, fresh squeeze of lime and broken
    tortilla chips. Top with cheese.

    Its our family's favorite chicken soup recipe!

    My quick easy favorite crockpot chicken recipe:

    Place chicken in crockpot (I buy the flash frozen breast, put 'em in there frozen, have not had a problem)
    1/2 white onion slices on top
    Pour some italian dressing over chicken (enough to cover the tops)
    Crockpot on high 4 hours or low 8 hours. YUMMY!!


    Bring on them baby steps...
    Step 1: done
    Step 2: waiting on amount, hubby had followup colonoscopy, I had visit to ER with followup procedure
    Step 3: to follow, won't know aim until things settle
    Step 4: to follow, currently at 6%
    Step 5: grown child
    Step 6: huge mortgage ANNIHILATED!!
    Step 7: ahhhh....
