    Question Thanksgiving leftovers

    Okay so I realize that Canadian Thanksgiving isn't until October 9th and Americans don't celebrate Thanksgiving until November so this is an early post for everyone but I decided to have a pseudo-Thanksgiving dinner this past weekend with my friends as on the real holiday we all spend time with our families. It was my first turkey cooking experience but it turned out really well but this is my first time where I am faced with the "traditional" Thanksgiving leftovers in my fridge/freezer needing to be eaten (my family is not very good with leftovers...I hate to say it but they usually ignore them until the food has to be tossed). I can figure out about a million things to do with all the turkey meat and vegetables I have left but I'm kinda stumped on how to deal with the stuffing/dressing and piles of mashed potatoes.

    Any tips on how to use up those items? Thanks!!

    With potatoes in mind how about using the leftovers in a Pierogie Casserole? http://teriskitchen.com/pasta/pierogie.html

    Gravy goes into the pot for turkey soup.

    Leftover cranberry sauce tastes so good in this quick & easy recipe. Cranberry chicken. Don't let the salad dressing ingredient scare ya, this is good.

    With my left-over's I made a turkey, almond casserole. It went over very well. We had turkey sandwiches of course and then I boiled the bones and made soup.

    When I made the soup, I used left-over rice, carrtos and onions etc from the dinner.

    Oh, I'm going to try the cranberry chicken. Can you marinate it the night before?

    My favorite for leftover turkey is turkey pot pie. For mashed potatoes I like potato cakes. I just add grated onion, egg and a little flour then sautee in oil...yummm.

    leftovers
    *great in turkey soup
    *tortilla, turkey, leftover dressing and cranberry jelly or sauce, roll up tortilla)
    *turkey casserole
    *turkey sandwhiches hot ones with gravy

    Turkey enchiladas. Potato pancakes. Spread stuffing in the pan, lay turkey on top of it and pour gravy over it. Droool... Don't forget hot turkey sandwiches!
