What can I do with leftover brown rice?

Besides throw it away?

Any sweet recipes? I made a sort-of cake out of the leftover oatmeal dh had for breakfast. Was pretty good.

I know this rice won't get eaten as leftovers as it is and the stir-fry was all gobbled up. I have about 1.5 cups of rice to make into something.

Any ideas? thanks!!

How about rice pudding? I make some that is kinda.... well, "throw it together and microwave it" and it yummy for breakfast. I put a portion in a bowl (or a pot if you don't want to microwave it) and add brown sugar, dried or fresh fruit (like apples or raisins), nuts or sunflower seeds, maple syrup, coconut milk or soy milk or whatever you choose, cinnamon.... whatever has to be used up, I throw it in and just heat it till the milk is absorbed most of the way. I am sorry I can't be more specific but I really do just throw it together.

I was thinking a little fried rice for lunch? Maybe mix an egg with it, honey,soy sauce and maybe some leftover veggies. Could omit any of these and just add what you have to make something quick.

I was also wondering about adding the rice to pancake mix. I have an awesome recipe for oatmeal pancakes that adds oats to the mix. Seems like rice in pancakes would be good too!
