    Default What can I do with a cup of leftover brown rice?

    Besides throw it away?

    Any sweet recipes? I made a sort-of cake out of the leftover oatmeal dh had for breakfast. Was pretty good.

    I know this rice won't get eaten as leftovers as it is and the stir-fry was all gobbled up. I have about 1.5 cups of rice to make into something.

    Any ideas? thanks!!

    Use it as a stretcher in meatloaf! Put sugar and milk on it for cereal (after it's reheated). Mix it with some hashbrowns for added texture. Add it to soup. Stuff peppers with it. DO NOT throw it away!!!

    Heck, feed it to the dog before you toss it out.

    Fried rice. I mix up my "scrambled egg" mix (egg, dot of milk, garlic powder, celery salt, pepper), throw it in the pan with the rice and a bit of oil and a handful of frozen veggies, and fry it up for a bit until the egg is all cooked.

    Sometimes I add a little milk or half and half and microwave it. Then I sprinkle brown sugar(or honey) and dried fruit in it for breakfast.

    I throw it in the freezer and add more rice if needed and other stuff to make mexi-rice. I add beans, onions, peppers, corn and salsa plus salt, pepper, cumin and garlic power to taste. You can omit anything except the salsa(I sometimes used tomatoes). This is what my hubby and I are having for lunch today!

    LOL, everyone took what i was going to suggest, put it in soup or make fried rice.

    Or try doing a search online, just type in recipe using leftover rice and see what comes up.

    Make rice salad with it. A bag of frozen vegtables thawed, a little onion, celery, green pepper, and your favorite salad dressing.

    Also in TG they suggest using it in the Universal Muffin recipe. I have not tried that. Here are my uses (most or all of which have been suggested):

    Fried rice w/ egg and veggies
    Milk, brown sugar and cinnamon for hot breakfast cereal
    Ingredient in meatballs
    Mix with Stovetop stuffing mixture to stretch it
    Ingredient in a casserole w/ leftover chicken and cream of celery soup

    Mix it with some salsa, add a touch of taco seasoning. Scramble a couple of eggs. Roll rice and eggs into tortillas for breakfast burritos.
