Easy and Cheap Gnocchi (potato pasta)
~After I learned how to make this this year I kicked myself for having spent $12 for it in a restaurant.
I can make 2 large dinner portions for .50.
Gnocchi (No-Key)
1 cup mashed potatoes (about 2 medium)
1 egg
2 cups flour
~Mix and knead ingredients into a ball. Shape potions into snakes and cut into half-inch pieces. Drop pieces into boiling, salted water. Cook for 5 minutes or until gnocchi have risen to the top. Delicious with red sauces, cheese sauces or primavera. ~~Constance

I wonder if you could make these with whole wheat flour??? I might have to experiment.

OMG!! This is one of my all time favorite dishes!
I remember as a child, when it got near to Easter, my entire family would get together to make these. It was alot more complicated then for some reason!! LOL And oh, are they fabulous!!!!
The way my grandparents did them was make the "dough", then we rolled them into thin, LONG ropes, cut them into bite size pieces. But, then my grandparents covered them with towels and let them sit out overnight THEN put them in the boiling water. I'm not sure why they had to sit overnight. And the making of them took almost a whole day too!!! Oh do I remember this well!!! When I make them, they're ready in about 30 mins!! LOL
I'm Italian & my grandfather was born in Italy, so I don't know, maybe it had something to do with that!! LOL

Thanks for the recipe. DH LOVES gnocchi. I have bought the frozen kind but I think they would be better and cheaper homemade.

This is one of my favorite foods of all time with red sauce parm cheese. I love this stuff and it's a good way to use leftover mashed potatoes! Do you just boil the potato and mash it? Or do you use leftover mashed potatoes?

can you prepare these ahead of time and store them? If so, how can they be stored (air-tight container in cupboard, refridgerator, freezer) and for how long?

Thank you for sharing your recipe. It sounds delicious! I didn't know gnocchi would be so easy to make. Now I am thinking of a way to add it into my menu this week, if not definitely next weeks menu

My mom always made these with leftover mashed potatoes. She didn't leave them to sit overnight, but she did leave them to sit for awhile to dry out a bit. You can cook them from fresh or, if you want to freeze them, lay them on a cookie sheet in the freezer. When they're frozen, put them in freezer bags and you can take out as many or as few as you need, depending on the number of people you're feeding.
I could NEVER replicate my mother recipe, so I'm going to try this one! Thanks!
