    Default My new year resolution... beans!!!

    Alright! Aside from being good for you, they are cheap! But I don't have the slightest idea what to do with them! I enjoy them, but not terribly, and I think DH is in the same boat as me! Since we're going to be completely full-throttle with our debt reduction, I need some tried and true bean recipes!!

    Ps. the only thing I know how to make is chili, but I can make that well!!!

    So give me what you got!!!

    OMG well I only eat beans with my rice and I mix potatoes in with the beans, but there is Chili:

    Ranch Style Beans #1

    2 Tablespoons oil
    1 medium onion, diced
    1/2 teaspoons garlic
    1 medium green bell pepper, seeded and diced
    1 Tablespoon jalapeno pepper, diced
    1 1/2 cups tomatoes, diced
    1/2 teaspoon cinnamon
    1 can pinto beans (with liquid)
    salt and pepper to taste

    Heat the oil in a heavy saucepan. Add the onion, garlic, and bell pepper. Cook until just soft. Add the remaining ingredients. Cover and simmer for 25 minutes. Serve warm. This makes 4 servings.

    Golden Bean Soup with Bacon

    1/2 pound dried great northern beans
    4 slices bacon
    1 cup onion, chopped
    1 1/2 cups carrots, sliced
    1 garlic clove, minced
    1/2 cup green onions, chopped
    2 cups water
    1/4 teaspoon crushed red pepper
    1/8 teaspoon black pepper
    29 ounces vegetable broth
    1/4 cup fresh parsley, chopped
    1 teaspoon brown sugar
    1/2 teaspoon lemon rind, grated

    Sort and wash beans and place in a large ovenproof Dutch oven. Cover with water to 2 inches above beans, and bring to a boil. Cook for 2 minutes. Remove from heat; cover and let stand 1 hour. Drain beans and set them aside.


    Cook the bacon in the Dutch oven over medium heat until crisp. Remove bacon from pan and drain all but 2 tablespoons bacon fat from the pan. Crumble the bacon and set it aside. Add the carrot, onion, green onions, and garlic to the bacon fat and sauté for 3 minutes. Add the beans, 2 cups water, red pepper, black pepper, and broth. Bring to a boil. Cover and simmer for 45 minutes or until the beans are tender.


    Combine crumbled bacon, parsley, brown sugar, and lemon rind; stir well. Sprinkle over soup when you serve it.

    Yield: 4 servings of 1 1/2 cups each.

    Easy Black Bean Soup
    3 cups Water
    2 cans Black Beans
    2 Stalks celery, chopped
    1 Onion, chopped
    1 tbsp Olive oil
    2 Cloves Garlic
    1 tbsp Fresh Ginger, chopped fine
    Black pepper to taste

    Heat oil in skillet. Saute onion until tender (5 min?). Add Celery, garlic, ginger -- cook 1-2 mins more to release flavors. Add everything else and simmer 30 mins or so to mix flavors and thicken a little.

    I love a big pot of beans and ham hocks. YUMMY

    Put into a crock pot:
    1 16 oz. pk of great northern beans, navy beans, lima beans etc., sorted
    1-4 ham hocks depending on size (these are really cheap but don't have much meat, mostly you want the flavor)
    2-3 cans chicken broth (can use water but it isn't nearly as good)
    water until crock is full
    1/2-1 chopped onion (white or yellow)
    salt and pepper to taste
    1-2 bay leaves (remove when done, they are poisonous to eat)
    I also add carrots and celery for vitamins

    Cook all day.
    Remove the hocks about an hour before dinner and take the meat off, add meat to crock and throw away fat and bone
    Remove bay leaves before serving.

    Make a pan of cornbread and enjoy.!

    Easy bean dip

    Slap 1 to 2 cups of drained (save the juice) cooked beans (pinto, chickpea, navy, northern whatever) into a blender. Throw in a medium size sweet onion cut into chunks. Add 3-4 cloves fresh garlic. A little black pepper is always good in there. Put the lid on and pulse until you get a good consistency, you may need to add a little of the bean juice to smooth it out.

    That's how I make my fake hummus using chickpeas. I leave out the oil cos my fat butt doesn't need the fat.

    Toss this is a nonstick skillet, heat it up and call it refried beans.

    Sort thru to pick out rocks and dirt clods
    Rinse well

    Put less than 1/2 full of whatever size crockpot you have, fill with water, add 2 pieces of bacon or 1/2 hunk of 'salt pork' from the butcher section of the store. Salt, pepper and add about 1 tsp. of chili powder. Cook overnight and all day the next day on high. Stir in the morning, sample the juice to make sure the salt is right and add a little water. If there isn't enough room for juice you may have to dip some beans out, it's a matter of experience to know how much to put into the pot. The longer you cook em the soup-ier they will be and that's what makes em good. Serve with cornbread and/or fried taters and onions......Yum!

    Paula Deen's Bean Cakes

    Take leftover northern beans that have been seasoned and cooked with pork. Mash the beans and add enough flour to bind (you can substitute bread crumbs if you want). Pan fry with a bit of oil.

    Here's my bean recipe ~

    1 lb bag of white beans, prepared according to package directions.

    When they're done I add to the pot 1/2 to 1 chopped onion, some diced ham, 2 cloves garlic minced or crushed in a garlic press, one small can tomato sauce or you can use a can of diced tomatoes, whatever you have on hand, the juice of 1/2 a lemon, and salt and pepper. Add more water if needed. Cook 20-30 minutes more until the onion is very soft.

    that's a great new year's resolution ~ I could stand to make myself enjoy beans a bit more - you are right - they are good for you & oh so cheap!

    These recipes sound wonderful - I plan on trying them all!!

    would this work to cook it on the stove top if I started it in the morning when we get up? It would cook about 8 hours maybe a little longer.....
    I don't have a crockpot here.

    Also, bump for more recipes, I was just coming to post a request like this, but saw this thread. But could use a few more recipes with beans IN them (not just beans alone) my kids have to try everything, but I will have more success if DD#1 can't see the beans first off.

    Super Purple Dip

    1 can black beans, drained
    1-2 tbsp. olive oil
    1-2 tbsp. lemon juice
    1 tsp. garlic powder
    1/2 small can artichoke hearts, diced
    Salt & black pepper to taste

    Blend or magic bullet beans with oil, lemon juice, and garlic powder until smooth. Stir in artichoke hearts and s&p. Serve as a sandwich spread, or with chips or veggies for dipping.

    We call it super purple dip because the boys *say* they don't like artichokes. But they eat this right up.

    I actually made the same New Year resolution. Beans and lentils are not so popular food here. Vegetarians eat them, ofcourse. I like them and want to learn how to use them more in our diet.

    A favorite here is black beans and sausage: Two cans black beans mixed with canned tomatoes, corn, onions, and cooked sausage. You can leave it thick or thin it with broth or water. You can add rice to the leftovers and make soup, or thicken it up and serve a fried egg on top for breakfast.

    Chalupa:

    1 Lb. beans
    3 lbs pork roast
    7 cups water
    1/2 cup chopped onion
    2 cloves garlic, minced
    1 Tbsp salt
    2 Tbsp chili powder
    1 Tbsp cumin
    1 tsp oregano
    1 4-oz can chopped green chilies
    Corn chips

    Put all ingredients except corn chips in dutch oven. Cover and simmer about 5 hours until roast falls apart and beans are done. Uncover and cook about 1/2 hour to the desired thickness. Servr with corn chips and choice of toppings.

    Mexican "crepe":
    Make thick batter of 1 part cornmeal, 2 parts boiling water and a glug of oil. Fry into large pancakes. Spread with mashed beans, tomato sauce, and chopped onion. Roll up.

    Vegetarian Feijoada:

    Bring to a boil then simmer 2 hours: 2c. black beans, 6 cups water, 2 large garlic cloves(crushed), 3 chopped onions, and 1 chopped green pepper.
    Meanwhile make the sauce and refrigerate at least two hours: 6 chopped tomatoes, 1 bunch chopped scallions, 1/2 chopped onion, 1 crushed clove garlic, 3 Tbs. lemon juice and a dash of Tabasco. Serve beans over cooked rice and top with sauce.
