Mixed Grain Casserole
I tried this recipe last night and it was a hit. I was pleasantly surprised. I've never done much cooking with grains & beans and this was a nice change from the usual fare. Plus, it was VERY inexpensive. (I'd share the cost, but it would be different than in the states, so it probably wouldn't be helpful. I'm pretty sure for me that it was under $4 including the chicken breast I put on top)
Mixed Grain Casserole
2 medium carrots, halved lengthwise and thinly sliced (1 cup)
1 cup fresh mushrooms quartered (I omitted this because I don't like mushrooms)
1 cup canned black beans, rinsed and drained (I used dry pinto beans, soaked overnight)
1 8 3/4 oz. can whole kernel corn, drained
1 cup veg. broth (I used water, since we don't have any broth)
1/2 pearl barley (I used quick cooking)
1/4 cup bulgur (I used long grain rice because I didn't have bulgur)
1/4 cup chopped onion (used one small onion)
1/4 tsp. garlic salt
1/2 cup shredded cheddar cheese
Combine all in 1 1/2 quart casserole. I put two chicken breast halves on top with no seasoning. Bake covered in a 350 degree oven for 1 hour or until barley and bulgur are tender. Stirring once halfway through the baking time. Sprinkle with cheese. Cover, let stand 5 minutes or until cheese melts.
Dh and I ate this for supper last night, tonight I added chopped cooked chicken, a little ranch dressing and some pepper and reheated it and ate it in Pita pockets. We still have enough leftover to do the Pita thing again for lunch tomorrow.

I've just seen this - thanks for posting it. This is the kind of food I LOVE. I will enjoy making this just after Christmas when I've had enough of eating meat. Sounds like it would be good cold too, with chutneys and maybe a dollop of natural yogurt on the side - yum
